We are currently looking for a Sous Chef (more of a manager role) who has their Red Seal Certificate and comes from the airline food sector to join our dynamic team!
A. Purpose and Scope
The job holder is responsible for providing support to the Head Chef; maintain company standards of quality in food preparation and adherence to customer specifications and quality of products. Also accountable for food; labour and related kitchen costs and plays a key role in the daily operation of the kitchen facility. Sous Chef assists in coordinating menu development including costing, specific menu items, and presentation and specification changes.
*Ensure hygiene standards laid down by the Company; airlines and the public health authorities are strictly adhered.
*Ensure that all the required food items are prepared in accordance with airline specifications i.e. weight and quality as detained in the menu specification and avoid food waste.
*Assist in ensuring food production chain is HACCP compliant
*Work closely with Purchasing Manager for procurement of materials and assist in sourcing specific materials as required, ensuring cost effectiveness.
*Inform employees of menu changes and any change in catering figures.
*Control, direct and train employees within the flight kitchen to achieve maximum effectiveness.
*Establish corrective action plan and follow up on product issues
*Manage menu costing and ensure Purchasing adherence to costing guidelines
*Ensure all kitchen practices are safe and in accordance with Company safety regulations.
10. Carry out employee training as required.
11. Supervise the employees for the observance of the safety standards and promote the safety at work in the company.
12. Perform other duties as assigned by Management.
Qualifications and Experience:
*10+ years Chef?s experience including appropriate accreditation (i.e. Red Seal)
*5+ years direct airline menu design, costing and pricing
*5+ years in food and beverage financial role
*5+ years experience managing personnel with direct reporting responsibilities
*Knowledge of Microsoft Office Products (Excel, Word, PowerPoint)
*Must have excellent interpersonal skills and leadership skills, and be comfortable working with all levels of employees and management in a multicultural environment.
*Effective problem solving skills
*Must be able to demonstrate excellent communication skills; both written and verbal
*Detail orientated and goal driven
*Able to multi-task effectively and work in a fast paced environment
*Must be able to take direction
*Shift work (flexible including weekends). Overtime duties are required as per operational needs.
The hours will be shift work early mornings (6:00am) and afternoons including weekends.
