SUMU is a modern Asian dining destination in Downtown Vancouver, bringing together premium sushi, yakitori, Japanese small plates, signature nabe, and an interactive dining experience.
We are looking for a creative and skilled Chef who brings both technical ability and original ideas to the kitchen.
We want someone who can execute — but also someone who can create.
Someone who looks at an ingredient and thinks about what else it could become.
What You Will Do
- Prepare and execute high-quality sushi, Japanese and Asian-inspired dishes
- Maintain consistency, quality, presentation, and food safety standards
- Develop new dishes and contribute ideas to SUMU's menu
- Experiment with flavors, ingredients, textures, sauces, and presentation
- Create dishes that are both visually appealing and commercially practical
- Work with the management and kitchen team on menu development and seasonal specials
- Help improve recipes, preparation methods, and kitchen SOPs
- Maintain high standards for freshness, quality, cleanliness, and organization
- Support daily kitchen operations during both regular and peak service
- Train and support junior kitchen team members when required
- Control food waste and maintain awareness of food cost and portioning
What We Are Looking For
We are looking for someone with real cooking skills and a creative mind.
You may be a strong candidate if you are:
- An experienced Sushi Chef, Japanese Chef, Creative Chef, Sous Chef, or Senior Line Cook
- Highly skilled with knives, ingredients, preparation, and presentation
- Confident working with sushi, Japanese cuisine, or Asian-inspired cuisine
- Creative and comfortable developing new dishes
- Able to balance creativity with consistency and commercial practicality
- Passionate about food and constantly interested in learning and experimenting
- Detail-oriented and committed to quality
- Able to work efficiently in a fast-paced professional kitchen
- A team player who can communicate effectively with FOH and BOH
Experience with sushi, omakase, yakitori, nabe, Japanese cuisine, Asian fusion, or modern Asian cuisine is an asset.

- Previous menus or examples of menu development
- A brief description of your culinary background and specialties
- A paid trial shift or practical cooking assessment for shortlisted candidates
Pay: From $65,000.00 per year
