The Lead Baker is responsible for daily bread production and bakery preparation to support Alfie’s kitchen operations. This role includes preparing the back-of-house (BOH) bakery area, producing focaccia and other bread products, maintaining the health of the sourdough starter, and ensuring consistent product quality. The Lead Baker operates independently during production and contributes to operational efficiency by supporting waste reduction, maintaining food safety standards, and assisting with kitchen workflow during peak service.
Lead Baker Role Responsibilities:
Bakery Operations/ Bread Production
- Open bakery operations and prepare the BOH production area for daily baking activities.
- Organize tools, ingredients, and equipment required for bread production.
- Maintain a clean and efficient workspace throughout production.
- Bake focaccia and other bread products according to the established production schedule.
- Independently manage baking processes, including preparation, fermentation, baking, and cooling stages.
- Perform dough portioning and dough balling with consistency and accuracy when needed.
Sourdough Management
- Feed and maintain the sourdough starter to ensure proper fermentation and product
consistency.
- Monitor fermentation stages and alert supervisors or management to any issues to ensure all quality standards are met.
Cleaning and Food Safety
- Perform scheduled deep cleaning tasks to maintain sanitation and food safety standards.
- Ensure compliance with all food handling, hygiene, and safety procedures.
Waste Reduction and Efficiency
- Minimize production waste through proper forecasting, portion control, and batch management by supervision
- Maintain efficient use of ingredients and baking resources.
Team and Kitchen Support
- Support the sandwich station or kitchen team during peak service periods when required to maintain workflow stability.
Other Duties:
- Ensuring bread production is completed and ready before service.
- Maintaining product quality, consistency, and proper fermentation control.
- Maintaining cleanliness and food safety compliance within the bakery area.
- Contributing to overall BOH operational efficiency during high-volume periods.
Pay: $18.00-$20.00 per hour
