Reporting to the Senior Director of Operations, the Director of Retail will oversee the daily food service of our 13 retail components at Dalhousie University. The Director or Retail will provide vision to growing the business and will be responsible for the profitable management of the retail business as a whole under contract with Dalhousie University.
Establish and maintain procedures for purchasing, receiving, storage, preparation and service of food
Coordinate and supervise personnel regarding production, merchandising, quality and cost control, labour, scheduling, staffing and training
Assist front line managers with any operational and staffing issues
Train, develop and mentor the management team and establish succession plans
Ensure that standards for sanitation and food safety are met
Assist Executive Chef in menu planning at applicable retail locations
Grow catering business through marketing initiatives
Prepare business plans, budgets and forecasts
Monitor financial operating results in order to achieve company and client objectives
Develop new initiatives and programs to improve sales and customer satisfaction
Ensure accurate and timely financial reporting for all business sectors
Ensure compliance with Marketing and Human Resources Programs
Ensure adherence to Aramark, Dalhousie, and retail franchise policies and procedures
Ensure adherence to Aramark’s Health and Safety Programs
University Degree or College Diploma in Hospitality Management or related field
5 years progressive management experience in a similar sized operation
Strong leadership and organizational skills
Strong analytical, project planning, and financial management skills
Ability to communicate effectively with clients, customers, colleagues and staff
Flexibility as some evening and weekend work may be required
