Skye Hotel Ridgetown is looking for an experienced and passionate Sous Chef – South Asian & Hakka Chinese Cuisine to join our culinary team. Reporting to the Head Chef, you will play a key role in the daily operation of the kitchen, ensuring the preparation of authentic, high-quality South Asian and Hakka Chinese dishes while maintaining exceptional food quality, consistency, and food safety standards.
The ideal candidate is a hands-on leader with strong culinary skills, experience in high-volume kitchens, and a passion for delivering outstanding guest experiences
Key Responsibilities
Prepare and cook authentic South Asian and Hakka Chinese dishes, ensuring consistency in taste, quality, and presentation.
Assist the Head Chef in the daily operation and management of the kitchen.
Maintain high standards of food quality, portion control, and presentation.
Coordinate kitchen workflow to ensure efficient service during busy meal periods.
Supervise, train, and mentor kitchen staff on recipes, cooking techniques, and food safety procedures.
Ensure compliance with all food safety, sanitation, and workplace health and safety regulations.
Monitor inventory levels, assist with ordering supplies, and ensure proper stock rotation (FIFO).
Minimize food waste while maintaining food cost targets.
Assist with menu planning, seasonal features, and recipe standardization.
Work collaboratively with the front-of-house team to ensure excellent guest service.
Maintain a clean, organized, and professional kitchen environment.
Perform other duties as assigned by the Head Chef.
Qualifications
Minimum 2–3 years of experience as a Sous Chef, Senior Cook, or similar leadership role.
Proven experience preparing authentic South Asian and Hakka Chinese cuisine.
Strong knowledge of curries, biryanis, kebabs, tandoori dishes, Hakka noodles, fried rice, Manchurian, chili dishes, stir-fries, and signature sauces.
Experience with wok cooking and high-volume food production.
Knowledge of food safety, sanitation, and HACCP principles.
Strong leadership, communication, and organizational skills.
Ability to work efficiently in a fast-paced environment.
Ability to work flexible shifts, including evenings, weekends, and holidays.
Culinary diploma or certification is considered an asset.
