Job Summary

The head chef leads the kitchen and manages the Lounge and Restaurant, both in operations as well as personnel of up to 50 team members. With the assistance of restaurant and lounge supervisors, the head chef controls, manages and leads the productivity, product and service that all guests and patrons expect while meeting and exceeding organizational goals.

Essential Duties and Responsibilities

Hires, trains and manages a kitchen team
Leads and supervises Restaurant and Lounge supervisors
Ensures that quality standards are delivered to guests, patrons and employees during regular business and special events
Writes and conducts annual reviews for overall employee development; includes training and performance management
Communicates regularly with co-related departments to ensure the Casino’s objectives and standards are met
Delivers staff meetings
Builds relationships with vendors and suppliers for new and upcoming product and existing product needs
Stays up to date with current trends in menus, food and delivery presentation
Modifies and creates new menus as needed so that they remain effective for the purposes for the restaurant demands
Orders supplies and product inventory as needed
Administers all necessary documentation for HR, finance and future business needs
Maintaining standards as it relates to safety and health requirements
Conducts inventory as needed
Develops policies and procedures as needed for entire Food & Beverage Department
Creates new and more effective ways for ultimate productivity at all levels within the kitchen including food and beverage department.
Undertakes special projects and activities as requested
May represent Sand Hills Casino in community relations
Supervisory Responsibilities

The head chef is responsible for leading and managing up to 15 kitchen personnel while overseeing restaurant and lounge supervisors and their departments. Oversee day to day functions for opportunities and support of organizational goals and objectives. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Qualifications and Requirements

As a head chef, you have at least 3 years of professional experience as an sous chef while managing a medium team. You will have a Red Seal or equivalent certification. You will bring great motivation and the will to achieve culinary excellence. With Strong communication and organizational skills accompanied with a creative imagination you are able to meet customers’ needs and create repeat business that ultimately generates revenue. Proficiency with Microsoft Office programs and inventory management programs is an asset. Ideally you have prior experience developing and adhering food costs necessary.

Physical Requirements

Physically you need to be able to operate various types of small equipment that aides in food preparation or cooking while standing continuously throughout the shift. Ability to use grill and fryer are also necessary. Regular use hands and wrists is necessary by use of knifes and utensils for food prep or service.

The incumbant must obtain and maintain thier gaming license from LGA (Liquor and Gaming Authority of Manitoba)
