The Sous Chef is to work under the Culinary department and reporting to the Executive Chef. A full-time team member must have open availability, without any restrictions on days and shift times. The working hours will vary from weekdays, weekends, and holidays (morning, mid, and evenings shifts).
RESPONSIBILITIES:
- Assist the Executive Chef in the supervision of all culinary & stewarding Team Members
- Train, motivate, and monitor performance of Team Members. Continuously strive for an engaged, enthusiastic high performing team
- Plan and execute high quality, creative menus for CAVU kitchen bar, ensuring leading presentation and food quality are met
- Plan, development and execute all training tools for the culinary team in regards to the hotel outlets
- Monitor food inventories while maintaining food cost targets within the budgeted guidelines
- Develop close and effective working relationships within Culinary/Stewarding and cross-functional relations with all departments, particularly the front of house team, Sales & Front Desk
- Ensure guest satisfaction by actively seeking feedback from Team Members and guests, following-up and taking action
- Stay current on industry/competitive trends and strategies for improvement to maximize Food & Beverage revenue
- Model and maintain Health and Safety practices and protocols
- Provide support for the culinary team, through coaching, mentoring and conducting shift briefings
- Assist with team member performance reviews
- Collaborate and provide support on social media initiatives including online reputation management (TripAdvisor, Yelp, etc.), content creation and social customer service
- Participate in promotional events to help boost community awareness of CAVU & the Hilton
- Report any deficiencies in equipment or small wares to the Executive Chef
- Participate in weekly internal meetings with Culinary and F&B management as needed
- Assists with banquet events as needed
- Oversee the full kitchen operation in the Executive Chef’s absence
- All other tasks as assigned by the Executive Chef
QUALIFICATIONS:
- Minimum of 3 years culinary management experience in a similar high volume environment is required
- Red Seal certification or international equivalent required
- Valid Food Safe Level 1
- Experience in a 4 or 5 star hotel or restaurant an asset
- Experience with administration such as food cost, scheduling, menu design and labour cost
- Self-starter that takes a proactive approach to problem solving & communication skills
- Detail oriented team leader with a passion for consistency
- “Win-Win” attitude, willing to help wherever needed
- Knowledge of Microsoft Office is an asset
- Ability to manage multiple functions while meeting deadlines
