We are seeking an experienced, motivated, and hands-on Sous Chef to join our culinary leadership team. This role supports the Executive Chef in overseeing all kitchen operations for hotel and restaurant.
Key Responsibilities
Kitchen Leadership
- Assist the Executive Chef in managing all daily kitchen operations.
- Lead kitchen operations in the Executive Chef's absence.
- Supervise, coach, and motivate cooks, prep cooks, dishwashers, and kitchen assistants.
- Foster a positive, respectful, and team-oriented work environment.
Restaurant & Banquet Operations
- Oversee food preparation for restaurant, breakfast, room service, and banquet functions.
- Coordinate production for weddings, conferences, meetings, tour groups, and special events.
- Review Banquet Event Orders and ensure all food is prepared accurately and delivered on time.
- Maintain consistency in recipes, portion sizes, presentation, and quality across all services.
- Ensure timely execution during high-volume service periods.
Culinary Excellence
- Prepare and cook menu items according to established recipes and hotel standards.
- Maintain exceptional presentation and quality of every dish served.
- Assist in developing seasonal menus, banquet menus, daily specials, and promotional features.
- Contribute creative ideas to enhance guest satisfaction and increase food and beverage revenue.
- Accommodate dietary restrictions, food allergies, and special guest requests.
Inventory & Cost Control
- Assist with purchasing, receiving, and inventory management.
- Conduct monthly inventory counts and monitor stock levels.
- Monitor food cost percentages and recommend cost-saving initiatives.
- Ensure products are rotated and utilized efficiently to reduce spoilage.
Qualifications
- Culinary diploma or equivalent professional culinary training preferred.
- Minimum 2 years of progressive culinary experience.
- Experience with banquet production is a strong asset.
- First Aid certification is considered an asset.

Work Schedule: This position requires flexibility. May need to work over the weekend, holiday or late night shift.
