Cold Side Line Cook – Fence & Post
At Fence & Post, we’re a small, independent restaurant with a big passion for craftsmanship. From hand-shaped sourdough and house-cured meats to churned-from-scratch ice cream, we make nearly everything in-house. We work closely with local farmers, ranchers, and producers to showcase the best of Alberta through thoughtful, seasonal cooking.
We are currently looking for a strong, organized, and dependable Line Cook to take ownership of our Cold Side station.
This is one of the most demanding and important positions in our kitchen. It requires someone who can stay calm under pressure, work with urgency, maintain exceptional organization, and consistently execute dishes to a high standard.
About the Position
The Cold Side station is responsible for a large portion of the restaurant’s menu and plays a critical role in service. You will be responsible for:
- Nearly all appetizers
- Salads and cold preparations
- All desserts during service
- Deep-fried menu items
- Pasta dishes
- Risottos
- Various pan-finished entrées and components
- Daily prep and station organization
This station requires excellent multitasking skills and the ability to manage several different cooking methods simultaneously while maintaining consistency and attention to detail.
What You’ll Do
- Set up and maintain your station for successful service
- Prepare ingredients from scratch, including vegetables, proteins, sauces, garnishes, and desserts
- Execute dishes accurately, consistently, and efficiently during service
- Manage multiple tickets and cooking techniques at the same time
- Ensure every plate leaving your station meets our presentation and quality standards
- Complete daily prep and assist with larger prep projects as required
- Maintain strict food safety, sanitation, and storage practices
- Keep your station exceptionally clean and organized throughout the shift
- Assist with end-of-night cleaning and closing duties

- Previous experience in a professional kitchen
- Strong knife skills and fundamental cooking techniques
- Ability to work cleanly, quickly, and efficiently under pressure
- Excellent organizational skills and attention to detail
- A strong sense of urgency and personal accountability
- Someone who takes pride in cleanliness and maintaining an orderly workstation
- A positive attitude and willingness to learn
- Ability to stand for extended periods and perform physically demanding work
- Fine dining or scratch-kitchen experience is considered a strong asset
