ORYZA Sushi is looking for an experienced Sushi Chef to join our team.
We are seeking a highly skilled chef with strong experience handling and preparing fresh Japanese fish and seafood. The ideal candidate is confident leading sushi operations, maintaining high quality standards, and working efficiently in a fast-paced environment.
Responsibilities
- Prepare high-quality sushi, sashimi, nigiri, maki, and specialty rolls
- Expertly handle, fillet, and portion fresh fish and seafood
- Maintain sushi rice quality, freshness standards, and food safety practices
- Manage and organize the sushi station during service
- Support inventory counting and ingredient quality control
- Work closely with the kitchen team to ensure smooth operations
Requirements
- Proven experience as a Head Sushi Chef or senior Sushi Chef
- Strong knowledge of Japanese cuisine and fresh fish handling
- Excellent knife skills and sushi craftsmanship
- Ability to lead and work independently during busy service
- Reliable, professional, and team-oriented
- Legal right to work in Canada
