Job Summary
MAiiZ Nixtamal is a kitchen rooted in traditional Mexican nixtamalization and scratch cooking. We produce fresh tortillas, masa, salsas, and nixtamal-based dishes with a strong focus on consistency, cleanliness, and efficiency.
We are looking for a disciplined dedicated Line Cook who understands prep, execution, and teamwork in a professional kitchen.
Duties
Line Cooking & Service
- Prepare and execute menu items according to MAiiZ recipes and standards
- Work stations including tortillas, plancha, proteins, and assembly
- Maintain speed, accuracy, and consistency during service
- Follow portion control and plating standards
- Communicate clearly with the kitchen team during service
Prep & Production
- Assist with daily prep including masa, salsas, proteins, and garnishes
- Support nixtamal-based production (tortillas, tostadas, masa handling)
- Label, date, rotate, and store all products correctly
- Minimize waste and report shortages
Food Safety & Cleanliness
- Follow FoodSafe and health regulations at all times
- Maintain a clean and organized workstation
- Perform opening and closing duties, including cleaning and sanitizing
- Handle food safely and correctly (hot, cold, allergen awareness)
Team & Professionalism
- Show up on time and ready to work
- Follow direction from the Head Chef / Kitchen Lead
- Maintain a respectful, focused, and professional attitude
- Support teammates during busy periods

Qualifications & Requirements
- Previous line cook or professional kitchen experience preferred
- Ability to work in a fast-paced environment
- Comfortable with repetitive tasks and standing for long periods
- Strong attention to detail and cleanliness
- Ability to lift up to 25 kg (55 lbs)
- FoodSafe Level 1 required (or willingness to obtain)
- Knowledge of Mexican food or nixtamal is an asset, but not required
