Brief Job Description:

The individual in this position will use the established Food Safety/Quality System to ensure compliance and quality is maintained while consistently evaluating the systems to ensure continuous improvement.

Detailed Job Description:


  • QA checklist
  • Collect data logger
  • Refill knife sterilizer test strips (at noon)
  • Review recipe records and packaging logs (includes verifying BBD’s) and bundle recipe with corresponding packaging log
  • Maintain documentation filing to ensure traceability process is simple


  • Sanitizer testing (1-2 hoses/week)
  • Foamer testing (1-2 hoses/week)
  • Kill floor acid testing (2 hoses/week – Wednesday afternoon)
  • Collect and file shipping/receiving logs from loading dock
  • Collect and file sanitation paperwork
  • Cut line acid testing (1 hose/week – Fridays before beef pushed from kill floor cooler to cutline cooler)
  • RTE inventory
  • Clean rationale oven
  • Check pre-operational checklists


  • PawKit calibration
  • Perform Calibrations/Verifications:
  • Scales
  • pH meter
  • Wall thermometer
  • Probe thermometer
  • Collect, replace, and file pre-op logs for RTE, cutline, and sausage kitchen


  • Smokehouse cold spot check
  • Perform mock recall


  • Maintain all quality/food safety SOPs
  • Special projects (eg. yield measurement programs, near infrared spectrometry programs, system upgrades) as requested by management
  • Manage the customer return/credit program
  • Maintain traceability system
  • Maintain Tenderness Program
  • Perform regular internal audits of processes and procedures

Annual Audit(s)

  • All paperwork kept in order routinely in preparation for annual audit
  • Prepare for audit by continuously checking that we are up to date on all regulatory requirements
  • Execute annual audit alongside auditor
  • Post Audit – File prior years audit documentation and start all new paperwork ready for use month following audit

OMAFRA – Meat Regulations

  • Keep abreast of any changes to the Food Safety & Quality Act, 2001 and Ontario Regulation 31/05 - Meat
  • Maintain and annually change over the prior year’s documentation

Employee Orientation/Training

  • Perform food safety training for all new hires
  • Ensure food safety training requirements are performed and signed off on by employee
  • Perform and maintain all food safety training for all staff members on an ongoing basis

Quality Talks

  • Design, organize and perform regular quality talks with staff

  • Design, organize and perform regular food safety talks with staff



  • Reporting as required by Plant Manager, Finance Manager, or Brothers

Skills and Competencies:

  • Critical thinking, decision making, and problem-solving skills
  • Organization skills with high attention to detail
  • Verbal and written communication skills
  • Ability to manage diverse groups and individuals effectively
  • Experience with lean management an asset
  • Knowledgeable in Microsoft Office and Google Documents


  • Valid Driver’s License
  • Degree in Food Science or related discipline preferred
  • HACCP Certificate
  • HACCP Compliance (maintain for VG Meats)
  • OMAFRA Meat Plant License (maintain for VG Meats)
