The Executive Chef is responsible for overseeing all culinary operations in our family dining restaurants, combining leadership, culinary expertise, and administrative duties.
Essential Duties & Responsibilities

Oversee training, scheduling, and performance management of Pack Members to ensure productivity, accountability, and service excellence.

Lead kitchen operations by supervising food preparation, presentation, and production flow, especially during peak periods.

Ensure compliance with safety, sanitation, and health regulations through development and monitoring of workplace programs.

Communicate effectively with guests and staff, analyze feedback, and implement improvements to enhance overall operations.

Drive department standards and contribute to strategic planning, focusing on operational efficiency, cost control, and customer satisfaction.

Ensure all department performance reviews are completed.

Guest
-
Ensure guests are greeted and acknowledged consistently, adhering to the 10/5 Rule.

Create and implement innovative menus and items for all outlets, aligning with current food trends, regional tastes, and client budgets. Collaborate with the Director of Food & Beverage on new selections and updates for banquets and special events.

Communicate with guests in a professional and friendly manner.
Financial

Protecting company assets by adhering to policies and procedures.

Audit food storerooms to ensure product quality and compliance with all health code requirements.

Assist the Food & Beverage Director in estimating the annual food budget.
Qualifications & Traits
-
Hold a Red Seal designation with formal culinary education and experience.
-
Demonstrate strong mathematical skills to interpret reports, manage budgets, and control costs.
-
Possess deep knowledge of food products, standard recipes, and proper preparation techniques.
-
Apply expertise in menu development, marketing strategy, and wage and cost control.
Physical Requirements
-
Capable of walking, standing, sitting, crawling, bending, twisting, reaching up to and including above shoulder level, crouching/squatting, and kneeling, for the duration of your shift.
-
Capable of climbing multiple flights of stairs. Dexterity of the fingers and hands with ability to squeeze hands, twist and rotate wrists and elbows.

Ability to do weight bearing tasks with arms, ex. lifting/using heavy pans, baking sheets, food pans etc.
-
Ability to work for extended periods in varying temperature ranges.
-
Ability to work in coolers or freezers for short periods of time.
-
Ability to do repetitive tasks for an extended period of time.

Visual acuity to see colour, near vision ability, tactile, smell and tasting abilities.

Capable of working in a loud environment.

Ability to lift, push and pull up to 50lbs.

Ability to lift 15lbs overhead.
Additional Requirements
Newly hired Pack Members must submit a completed police clearance to Human Resources. Employment may begin before the results are received, based on the Pack Member’s confirmation that they have no unpardoned criminal convictions.
