Position Overview:
The Bakery Cafe Manager is a strategic, hands-on operational leader responsible for the commercial success, production synchronization, and guest experience of a high-volume Purebread bakery cafe. This role requires an entrepreneurial mindset, balancing meticulous daily management of the location’s two primary costs — labour and food waste — with the fast-paced, high-standard hospitality execution required during peak retail rushes. The ideal candidate functions as a bridge connecting back-of-house culinary artisan teams with front-of-house hospitality professionals to execute dynamic retail visual displays, optimize high-volume product throughput, and build a highly cross-trained, stable workforce.
Core Pillars of Responsibilities:
PILLAR 1: Cost Control & Financial Management
- Wastage & Yield Strategy: Track, input, and analyze daily production waste metrics. Systematically audit the relationship between historical sales patterns and daily production sheets to align oven bakes precisely with real-time customer demand.
- Labor Optimization: Architect, publish, and control cost-effective weekly labor schedules matching variable sales velocity curves. Eliminate unauthorized overtime, control shift configurations of full-time and part-time staff, and deploy strategic roster cross-training to minimize operational lulls.
- COGS & Inventory Management: Oversee absolute structural accuracy during weekly and monthly raw ingredient and beverage inventory counts. Audit variances between actual and theoretical food costs, implementing immediate corrections for portion control, shrinkage, and vendor invoice errors.
PILLAR 2: Production Sequencing & Quality Control
- High-Impact Merchandising: Dictate visual presentation standards for the primary display and linear glass counter structures. Ensure full production deployment by critical morning launch, followed by tactical merchandising consolidations in the afternoon to preserve visual density.
- Technical Standards Auditing: Execute structural quality checks across premium beverage and pastry programs, enforcing extraction parameter compliance, dairy/alternative temperatures, oven bake specifications, and sensory standards.
- Asset Protection & PM Programs: Manage continuous Preventative Maintenance (PM) logs for high-capital operational infrastructure, including artisanal deck ovens, commercial refrigeration grids, reverse osmosis water filters, and multi-group espresso lines.
PILLAR 3: Team Leadership & Legal Compliance
- Recruitment & Onboarding Lifecycle: Source, interview, select, and systematically onboard high-performing baristas, supervisors, and service operators using a structured, competency-based playbook.
- Performance Management & Documentation: Cultivate an accountable store culture through deliberate performance tracking, continuous coaching, and clear milestone evaluations. Author and execute rigorous, legally defensive progressive discipline sequences and compliant workforce alignment actions.
- Food Safety & Regulatory Compliance: Guarantee pristine compliance with municipal and provincial health regulations, maintaining absolute fidelity across daily FIFO matrices, cooling logs, sanitization cycles, and physical workspace security.
PILLAR 4: Guest Experience & Shift Execution
- Throughput Optimization: Command the retail service floor during peak periods, actively diagnosing and removing processing bottlenecks across ordering, extraction, warming, and hand-off sequences.
- Community & Reputation Management: Solve hospitality friction points directly on the floor with confidence and grace. Audit digital sentiment trends, customer satisfaction scores, and local community review streams to drive repeat visits.
Schedule:
- 5 Days per week & 8.5 hrs per day
- Special event coverage when needed
Pay: From $55,000.00 per year
