Gusto 101, in Toronto’s thriving King Street West neighbourhood, is as busy today as the day it opened in 2012. With design firm Munge Leung, owner Janet Zuccarini transformed a former dilapidated auto repair garage into a cozy industrial enoteca. In addition to serving up fresh authentic Italian dishes … with some global twists, Gusto boasts several firsts that have made Toronto’s restaurant aficionados take notice: first restaurant in Toronto to sell wine-on-tap for $1 an ounce; first restaurant patio in the city to have an all-seasons retractable glass roof. In 2013, Gusto also won a coveted International Hospitality Design Award and has been celebrated for both food and experience by Conde Naste Traveller, Now Magazine, Taste Toronto, Thrillist, Foodism, and BlogTO.
At Gusto 54, our line cooks are passionate individuals with a love of bringing great food to the people. A line cook is responsible for running a specific station in the kitchen – for example, the grill station, pasta station, or sauté station. The primary duties of a line cook include the preparing and assembling dishes, and can include a wide range of additional responsibilities.
Prepare food to order as specified by the Chef and guest
Follow recipes accurately as outlined by Chef
Coordinate timing of dish completion with other cooks, as directed by Chef
Accommodate special requests and dietary restrictions as directed by Chef
Station set up
Ensure all supplies needed for service ready for use
Prior to service, prep dish elements such as stocks and garnishes. This may include chopping vegetables and butchery.
Perform duties in accordance with Ontario Health and Safety Standards
Regular hand washing
Mark and date all stored food
Ensure dishes are prepared to accurate temperature
Station clean up
Disposing of waste
Sweep and mop
Clean all surfaces on station
Store or dispose of all unused items
Preference will be given to candidates with:
Previous experience in high volume kitchen or equivalent culinary education
Previous experience with hot stations a must (i.e. Saucier, Pasta, Grill)
Intermediate to advanced knife skills
Time management skills
Thorough understanding of safe food handling
