SUMMARY:
Crown Isle Resort is looking for a full-time Banquet Cook to join our culinary team in Courtenay, BC. This role is ideal for an experienced cook who thrives in a fast-paced, team-oriented environment and enjoys the unique energy of catered events and large-scale food preparation.
As a Banquet Cook, you will primarily support banquet and event operations throughout the resort, including weddings, golf tournaments, corporate functions, holiday events, breakfasts, lunches, plated dinners, buffets, and cocktail receptions. Events may range from small groups to functions of up to 160 guests, and may include multiple staggered events in one day or evening.
This is not a restaurant line cook position. Banquet Cooks focus on large-scale prep, organized execution, event timing, plating, buffet setup, carving stations, and maintaining consistency and quality across all catered functions. You will also assist with prep production for the Timber Room kitchen as needed.
The successful candidate is reliable, organized, calm under pressure, and takes pride in delivering high-quality food while working efficiently within a professional culinary team. This role has strong growth potential for someone interested in developing into future leadership opportunities.
DUTIES & RESPONSIBILITIES:
Prepare and execute food for banquet and catered events including breakfasts, lunches, dinners, buffets, and receptions
Assist with food preparation and production for the Timber Room restaurant as required
Execute banquet service efficiently and consistently for events of varying sizes and service styles
Prepare and present banquet buffet stations, plated meals, and carving stations
Maintain strong communication with Chefs and kitchen team members to ensure smooth event execution and timing
Set up and organize banquet prep stations and equipment before service
Operate kitchen equipment safely and efficiently including ovens, Rational ovens, deep fryers, flat tops, burners, food processors, blenders, slicers, and mixers
Monitor food quality, portioning, presentation, and temperature standards throughout service
Follow all food safety, sanitation, and workplace safety standards
Assist with receiving, storing, rotating, and organizing food inventory
Maintain a clean, organized, and professional kitchen environment throughout shifts
Assist with opening, closing, cleaning, and breakdown duties as required
Adapt to changing event timelines, special dietary requests, and multiple event priorities
SKILLS & QUALIFICATIONS:
FOODSAFE Level 1 is required prior to employment
Previous banquet, catering, or high-volume kitchen experience is strongly preferred
Minimum 2 years cooking experience in a professional kitchen environment
Experience preparing and executing large group functions and catered events is considered a strong asset
Ability to multitask and remain organized during high-volume service periods
Comfortable operating commercial kitchen equipment and prep tools safely and efficiently
Strong communication and teamwork skills
Ability to work flexible schedules including mornings, evenings, weekends, and holidays
Ability to stand for extended periods and lift up to 50 lbs
Culinary education or apprenticeship training is considered an asset
