We’re looking for a strong, experienced Junior Sous Chef to join our kitchen leadership team.
This is an opportunity for a chef who is ready to take the next step — someone who has solid professional kitchen experience, knows how a successful kitchen should operate, and is ready to take on real responsibility.
We’re not looking for someone who simply wants to work a station. We’re looking for someone who can lead, teach, problem-solve, and help run the kitchen.
THE ROLE
Working closely with the Head Chef, you’ll play a key role in the daily operation of our kitchen across Scozia Italian Kitchen and Fergusson Pub.
You’ll help lead service, support the kitchen team, maintain standards, and step into a leadership role when the Head Chef is not on site.
WHAT YOU’LL DO
- Lead and support the kitchen team during busy services
- Help train and develop cooks and new team members
- Ensure food quality, consistency, presentation, and portioning
- Assist with menu preparation, specials, and recipe execution
- Oversee prep and ensure stations are properly stocked and organized
- Help manage ordering, inventory, food storage, and waste
- Monitor food quality and kitchen standards throughout service
- Ensure proper food safety, sanitation, and cleanliness
- Help maintain kitchen systems, recipes, prep lists, and procedures
- Communicate effectively with the Head Chef and Front of House team
- Step up and take charge when needed
- Lead by example and help create a positive, accountable kitchen culture
EXPERIENCE MATTERS
We are looking for someone with significant professional kitchen experience who is ready to take on more responsibility.
The ideal candidate will have:
- Several years of experience working in a professional, full-service kitchen
- Previous experience as a Sous Chef, Junior Sous Chef, Lead Cook, Chef de Partie, or similar leadership position
- Strong knowledge of professional kitchen operations
- Experience working in a busy, high-volume environment
- Proven ability to lead and motivate a kitchen team
- Strong understanding of prep, service, timing, and kitchen organization
- Experience training and mentoring other cooks
- Excellent communication and problem-solving skills
- A strong understanding of food safety and sanitation
- The ability to stay calm, organized, and professional under pressure
- A genuine passion for food and high standards
