Position Overview:
Reporting to the Executive Chef, the First Cook is responsible for overseeing the delivery of a high-quality culinary experience for guests of all kinds including in the restaurant and banquet facilities. The First Cook is a supervisory role that often leads others in the kitchen team. This position requires the individual to work as per the demands of the facility, which includes shifts during the evenings on some weekends and holidays.
Primary Duties and Responsibilities
- Work closely with the Executive Chef and Sous Chef to prepare the kitchen, run the line, and close the kitchen down
- Lead the kitchen team in the absence of the Executive Chef and Sous Chef
- Provide input for new menu items and daily specials
- Develop and demonstrate a complex understanding of the full menus including the concession, restaurant, weddings, banquets, food truck and on course food stations
- Assist in cooking and managing all buffet food for the banquet facilities
- Skillfully carve whole meats or cook steaks to perfection in front of guests
- Assist in the preparation and delivery of food to various locations including the food truck, beverage cart, concession and other on course food stations
- Set up, operate, and close down the food truck for events
- Ensure that the quality standards set by the Executive Chef are consistently achieved
- Monitor daily temperature checks as per HACCP
- Ensure Food Safe standards are maintained
- Communicate any issues with food products to the appropriate manager
- Complete daily opening and/or closing checklists
- Adhere to uniform standards
- Maintain a clean and organized work area
- Other duties as assigned

Qualifications
- Two years of experience in a similar culinary role is required
- Valid Food Safe Level 1 will be required to be maintained throughout employment
- Willingness to complete a Police Information Check is required
- Valid Basic First Aid, CPR-C, and AED Certification, or equivalent will be required to be maintained throughout employment
