We are looking for a Line Cook who possesses a strong passion for scratch cooking, exceptional attention to detail, and a commitment to kitchen excellence.

As a Line Cook at Byblos, you are a core driver of our culinary reputation and guest experience.
Working closely with the Executive Chef and Sous Chefs, you will be responsible for preparing high-quality dishes from scratch according to strict recipes, portion controls, and presentation standards. Moving with speed, precision, and a team-first mentality, you will maintain meticulous station cleanliness, execute recipes accurately, and help deliver an unforgettable dining experience to every guest.
What You'll Do
Culinary Execution & Food Preparation
- Execute daily prep and station setup for scratch cooking according to Byblos’ recipes, portion guidelines, and plating specifications.
- Prepare vegetables, fruits, meats, and seafood utilizing refined knife techniques and safe food handling practices.
- Maintain a comprehensive prep list and take proactive notes to ensure total station readiness prior to service.
- Operate standard commercial kitchen equipment safely, carefully, and efficiently.
- Perform tasks delegated by the Executive Chef, Sous Chef, or General Manager with precision.
Station Maintenance & Food Safety
- Maintain clean, organized, and sanitary stations at all times, without exception.
- Strictly follow First-In, First-Out (FIFO) inventory rotation to maximize product freshness and eliminate waste.
- Assist with receiving, organizing, and properly storing kitchen deliveries and inventory items.
- Restock low items on station during shifts to ensure unbroken service flow.
- Adhere strictly to WHMIS, health, safety, sanitation, and hygiene standards.
- Promptly report any equipment malfunctions or utensil deficiencies to leadership.
Team Collaboration & Operational Support
- Complete all opening, running, and closing assignments efficiently as instructed.
- Treat kitchen and front-of-house colleagues with dignity, respect, and professionalism at all times.
- Work collaboratively with line mates to support team goals during high-volume services.
- Assist with routine cleaning of prep areas, heavy equipment, and utensils.
- Perform additional duties or responsibilities as assigned by culinary leadership.
What We're Looking For
We are looking for a disciplined, detail-oriented cook who brings passion, professionalism, and positive energy to the kitchen line.
You bring:
- Experience: 1–2 years of cooking experience in a fast-paced restaurant (2+ years preferred for Senior Line Cook roles); high-volume culinary experience is strongly valued.
- Skills: Strong foundation in professional cooking techniques, scratch prep, and knife handling skills.
- Education: A diploma or certificate in Culinary Arts is considered an asset.
- Composure & Attitude: Ability to take direction well, remain calm under pressure, and maintain a positive attitude with a strong willingness to learn.
- Communication & Organization: Excellent organizational skills and effective communication within a busy kitchen line.
- Physical Capability: Ability to stand for extended periods (100% of the shift) and lift/carry kitchen equipment and ingredients weighing up to 40 lbs.
- Commute: Ability to reliably commute to downtown Toronto, ON.

Compensation is competitive and commensurate with the candidate's skills, years of relevant experience, qualifications, and overall fit for the role.
