The position of the Prep Cook is responsible for all daily mise en place and food preparation, producing recipes according to specification for service, and supporting Cook 1 and Cook 2 by ensuring ingredients are prepared, labelled, rotated and stocked. The position has limited responsibility for service except when required.
The Prep Cook is primarily responsible for:
- Completing assigned daily preparation tasks and prep lists accurately and within required timelines.
- Preparing vegetables, meats, seafood and other ingredients according to established specifications.
- Preparing sauces, chutneys, marinades, spice blends, stocks and other recipes according to established preparation standards.
- Accurately measuring and portioning ingredients to maintain consistency, control food costs and minimize waste.
- Supporting preparation for lunch, dinner, banquets and other service periods.
- Assisting the culinary team during service and high-volume business periods.
- Supporting banquet and large-volume food preparation as required.
- Receiving, checking, storing and organizing deliveries.
- Labelling, dating, storing and rotating products using FIFO procedures.
- Safely handling and storing food products according to established food safety and sanitation procedures.
- Using kitchen equipment and tools safely and reporting maintenance concerns promptly.
- Maintaining clean, organized and sanitary preparation areas, refrigerators, storage spaces, equipment and utensils.
- Collaborating with the culinary team and building positive, respectful and professional working relationships.
- Participating in training and ongoing opportunities to develop culinary knowledge and skills.
- Demonstrating reliability, organization, attention to detail and a willingness to learn.

- Ability to work effectively in a fast-paced, high-volume kitchen environment and perform well under pressure.
- Ability to stand and walk for extended periods throughout the shift.
- Ability to perform physically demanding tasks, including reaching, bending, twisting, pulling, pushing and lifting.
- Ability to lift up to 30 lbs independently and heavier items with assistance.
- Strong manual dexterity, hand-eye coordination and attention to surroundings.
- Ability to communicate and collaborate effectively with team members and guests.
- Ability to maintain high standards of personal grooming, hygiene and professional appearance.
