The 2nd Cook is responsible for preparation and/or cooking of food under the supervision of the 1st Cook. The 2nd Cook will provide excellent customer service, be comfortable working in a fast paced environment, and flexible with last minute changes. The position requires an individual with the ability to learn quickly, strong organizational and communication skills and the ability to work as part of a team. Work location is on the railroad within Northern Ontario, although travel to other provinces may be possible. Travel to work locations is arranged by the employer. Criminal background check will be conducted by the employer upon offer of employment.
Requirements
- 1-3 years remote camp/commercial cooking experience
- Safe Food Handler’s Certificate is considered an asset
- Must be willing to travel regularly and work in remote areas for extended periods of time.
- Complete any necessary training as required
- Be accessible to meet the needs of customers and staff.
- Criminal background check will be completed by employer as condition of employment.
- Reports to 1st Cook
Working Conditions
- Must be able to move continuously (lift, carry, sit, push, pull, stretch, walk, bend) during work hours and able to lift and/or carry up to 50 pounds
- Must be available and willing to work a minimum of 12 hrs/shift (split shift may be necessary depending on circumstance)
- May require working in damp, dusty and dirty areas.
- Will be required to sleep on board the train during work cycles and may encounter noise during sleep hours
- May be required to carry loads up and down stairs/ladders on a consistent basis
Duties and Responsibilities
- Prepare and present high quality meals in accordance with menu specifications, crew size, menu plan and appropriate timelines.
- Cook in accordance with Food Safety Guidelines.
- Wash dishes, clean kitchen and diner cars as required in order to maintain a sanitary environment.
- Mopping and sweeping
- Rotate perishable food items, using the oldest first.
- Ensure food costs are controlled and that all groceries are utilized effectively with as little waste as possible.
- Perform unloading, loading, and stocking of groceries and supplies.
- Assist in recording inventory and maintaining appropriate inventory levels
- Report any needed repairs or unsafe conditions to the 1st Cook and/or Camp Attendant promptly.
- Maintain a clean and infection-free work area at all times.
- Maintain good personal hygiene at all times
