THE ROLE
The Line Cook at Dorinku Osaka is a key culinary position as part of the BOH department. This individual is responsible for quality food preparation and upholding a safe, efficient work environment in a high-volume kitchen. At Dorinku Osaka, our line cook team prepares a variety of Japanese dishes under guidance of the BOH Manager. This passionate individual takes a genuine interest in Japanese cuisine and our guest experiences while being able to take direction and perform tasks with speed and accuracy. Key Japanese cuisine foundations are acquired while in the role of the Line Cook.
The Prep Cook role at Dorinku Osaka is integral to the BOH department, playing a crucial part in culinary operations. Tasked with preparing various ingredients received from suppliers for kitchen production, this individual ensures that day-to-day tasks are completed with adherence to safe and efficient work practices as per provided specifications. Passionate about delivering a stellar guest experience, the Prep Cook takes pride in their work, showing genuine interest and dedication. They excel in following directions, executing tasks with speed and accuracy, contributing to the seamless functioning of the kitchen.
THE RESPONSIBILITY
- Set up and stock stations with necessary supplies and ingredients
- Adheres to brand specifications including preparation, technique and plating
- Upholds safety standards at all times
- Clean, cut, carve, season, cook, portion, label food in preparation for service (i.e., chopping vegetables, slicing fish, mixing sauces, and portioning, etc.)
- Prepares a variety of meats, seafood, poultry, vegetables, dairy and other foods using knives, electric mixers, food processors, scales, and portion bags
- Prepare food for consumption using ovens, gas stoves, fryers, griddles and broilers
- Participate in daily and periodic training/development (i.e., station training, one-on-one's, new menu training, team meetings, etc.)
- Participate in stock counting and food inventory
- Maintain a welcoming and professional environment for guests and team members using respect, honesty and humility
- Performs other assigned duties (i.e., line checks, deep cleaning, periodic cleaning, routine equipment sanitization, etc.)
- Perform various food preparation tasks including: cutting, carving, seasoning, cooking, portioning, and labeling using a variety of kitchen equipment
- Ensure compliance with brand specications for ingredient preparation, technique, and storage
- Monitor and manage food prep levels to minimize waste and avoid stock shortages
WHAT YOU BRING
- Previous experience working as a Line Cook or Prep Cookfor 1 year; experience in Japanese cuisine considered an asset
- Adaptable and coachable attitude
- Pre-acquired knife skills, including usage, safety and cleaning are considered an asset
- Ability to prioritize and multitask under pressure
- Great communication skills using written & spoken English; Japanese language interest and/or proficiency is welcomed
Pay: $16.00-$20.00 per hour
