Nestled in a vibrant mountain community, we are dedicated to celebrating authentic Italian flavors with a modern, elevated touch. Our menu will showcase a curated selection of antipasti, scratch-made pastas, authentic wood-fired pizzas, and elegant main courses. We are building a passionate, dynamic team and are looking for a visionary culinary leader to guide our kitchen from launch to long-term success.
Job Summary
As the Chef de Cuisine, you will oversee all daily culinary operations, menu execution, and kitchen management. You will work closely with ownership and management to establish Bella Vita as a premier dining destination in Revelstoke. The ideal candidate is a hands-on leader with a deep appreciation for Italian cuisine, a sharp eye for presentation, and the operational skill to manage a high-volume, premium kitchen.
Key Responsibilities
- Culinary Excellence & Production: Oversee the preparation and execution of all menu items (appetizers, pastas, wood-fired pizzas, and mains), ensuring consistency, exceptional taste, and beautiful presentation.
- Menu Development: Collaborate on seasonal menu updates, features, and adjustments that utilize fresh ingredients and appeal to both locals and tourists.
- Team Leadership: Recruit, train, mentor, and schedule kitchen staff. Foster a positive, collaborative, and professional kitchen culture built on mutual respect and high standards.
- Inventory & Cost Control: Manage food costs, inventory rotation, ordering, and waste management to ensure kitchen profitability without compromising quality.
- Kitchen Operations: Maintain strict health, safety, and sanitation standards (FoodSafe guidelines). Ensure all kitchen equipment, including the wood-fired oven, is properly maintained and operated.
- Expediting: Lead the line during peak hours to ensure smooth timing, coordination, and communication between the kitchen and front-of-house teams.
Qualifications & Requirements
- Experience: Minimum of 3–5 years of leadership experience as a Chef de Cuisine, Sous Chef, or Head Chef in a high-volume, semi-fine dining environment (experience with Italian cuisine and wood-fired ovens is highly desirable).
- Leadership Skills: Proven track record of managing, motivating, and developing a diverse culinary team.
- Operational Acumen: Strong understanding of kitchen financials, including food cost calculations, inventory tracking, and labor management.
- Passion for Hospitality: A deep commitment to culinary excellence, consistency, and guest satisfaction.
- Certifications: Valid FoodSafe Level 1 (Level 2 preferred) or equivalent.
- Location: Must be legally entitled to work in Canada and willing to relocate to or currently residing in Revelstoke, BC.
