The Opportunity
Reporting to the Central Bakery Manager (or his/her delegate), the Pastry Chef is responsible for the overall production of all bakery products (Bread, Cake &/or other Pastries) produced and sold at the Central Bakery or Store.
He/she is also responsible to oversee and plan of all ingredients, and prepare for production.
- In charge of the production of all bakery products include bread, cake &/or other pastries sold in Central Kitchen or Store
- Oversee and plan for all ingredients and dough for bread, cakes, rolls, mousse, puddings, sweet goods, batters and icings and frostings according to standard operating procedures or customers’ requests
- Ensure product quality, inventory level and wastage are adhered to the Company’s established standards
- Ensure the team accurately execute the baking production process (SOP)
- Ensure order and replenish inventory is done on a timely basis
- Provide guidance and supervision to the Bakery Production team, ensure fair distribution of work and ensure proper scheduling is done
- Provide training, disciplinary actions, corrective and positive feedback on staff performance
- Participate in new product research and development process, encourage innovations
- Manage and responsible for the cleanliness, hygiene, equipment, and tools maintenance follow up and workplace safety of the production area
- Responsible for answering customers’ enquiries
Knowledge, Skills and Ability Requirements
- Minimum 5 years of bakery production experience in which 3 years are in supervisor capacity
- Demonstrate strong knowledge and skills in production of bakery products; good knowledge and experience in supervising bakery production workflow and controlling cost and wastage
- Ability to manage and train employees
- Possess knowledge in workplace health & safety and food safety (FoodSafe Certification requires)
- Experience in new products research and development is required
- Flexible to work in various shifts, including weekdays, weekends, holidays, morning and evening hours
- Good communication skills , able to communicate in Chinese (Cantonese &/or Mandarin) is an asset
