Flores & Pine is a new restaurant start up in a familiar location in NW Calgary (previous Bears Den). Slated to open June 2019, Flores & Pine is an upscale but approachable destination, drawing on the heritage of our rural location to offer a sophisticated yet comfortable dining experience. Sourcing the best of the region from wine to protein, providing the freshest ingredients available, offering seasonally-inspired wood -fired specialties, rotisserie classics, small plates, and a soon to be famous brunch in a contemporary, high energy restaurant, bar, and event space. As the Sous Chef you will…

  • Create schedules for kitchen staff to ensure optimum resource management and speed of service
  • Train new and existing kitchen staff on the preparation, arrangement and plating of dishes per the current menu
  • Ensure all staff members adhere to culinary standards and regulations
  • Respond to guests inquiries and concerns personally
  • Come up with new creative ideas using seasonal and local ingredients for the specials
  • Track, record and replenish inventory as needed
  • Cross-train kitchen staff on multiple stations
  • Assist Executive chef with pricing menu items
  • Coordinate the execution of a la carte menu and events functions

Qualifications & Skills

  • 6+ years’ culinary experience in a high-volume, full-service restaurant
  • 3+ years culinary experience in catering and Events
  • Culinary school completion
  • Familiarity with menu costing procedures and proficiency with latest culinary software programs
  • Experience in artisanal style cooking with live fire as well as cooking with latest high tech kitchen equipment and ovens
  • Knowledge of best practices for training kitchen staff and implementing kitchen procedures
  • High level of creativity, consistency, flexibility and reliability
