Job Description:
The CHEF is responsible for kitchen operations to ensure meal service as per contractual commitments, HACCP standards and company approved policies & procedures are met. This position is to lead the kitchen brigade in a professional manner that encourages a positive & learning working environment. In a working site where no Camp Manager is present, the CHEF or COOK will ensure that all site operations are maintained and housekeeping & kitchen staff are compliant to position and duties.
Job Duties:
- Daily participation in site safety requirements and lead meetings. Develop & ensure a safety conscious kitchen brigade by providing mentoring, development &/or discipline to ensure all staff adhere to client & Torch Industries’ safety requirements, hygiene & sanitation, policies & procedures and PPE specifications.
- Ensure & maintain personal hygiene & uniform cleanliness and requirements throughout shift as per standards for all.
- Daily meeting with Camp Manager to discuss operations, client relations, scheduling and staffing matters.
- Adhere and maintain required documentation to ensure kitchen and or site operations are disclosed to the head office in a timely and professional manner at all times.
- Ensure all groceries are received and put in proper storage areas following food safety and storage guidelines.
- Ensure weekly and monthly food inventories are taken.
- Ensure proper organization and utilization of storerooms, fridges and freezers
- Ensure all fridges and freezers operate at the proper temperatures as outlines in the catering contract
- Ensure proper rotation of groceries to maximize food safety and minimize food costs and spoilage
- Ensure enough staff is on site/shift at all times to run an effective yet cost efficient catering operation. This may include creating and or adjusting workload schedules.
- Ensure that all staff are carrying out their duties in a timely and safe manner.
- Ensure that kitchen is clean and sanitized at all times.
- Ensure all staff follow food safety guidelines with receiving, handling, preparation, cooling, reheating and storage.
- Ensure all safety precautions are in place and being followed.
- Supervise production, loading and organization of Rig Boxes and any outside catering.
- Follow all directives as laid out by the Camp Manager and or Torch management
- Review scheduling and menu planning with the Camp Manager.
- Ensure that groceries are ordered in sufficient quantities to carry out menu outline and client contractual commitments.
- Adhere to menu rotation.
- Ensure that budgets and expectations are achieved.
- Quarterly reviews with Catering Operations Manager with Camp Manager present
- Understand of KPI of each contract and each position under your supervision.
- Leadership and guidance with unloading/loading of weekly grocery truck deliveries.
- Presence during meal prep and service time to ensure standards are met and client relations maintained.
- Leadership and guidance with set up/tear down of camp.
- Wear required uniform and PPE: approved kitchen shirt and pants, slip resistant footwear (listed as non-slip or slip & oil resistant on shoe), hair net &/or headwear (beanie) or as required per site requirements.
- Any other duties as assigned by Camp Manager and or Torch management.
Education and Experience:
- Red Seal Certification or Journeyman Certification with 5+ years’ experience including 2 years of remote camp experience preferred
- High School diploma
- Literate in the English language with reading and writing competency
- Proficient with computer awareness & use
- Awareness & ability to operate all industrial kitchen equipment (incl. grills, ovens, fryers, mixers, etc)

Pay: $21.00-$26.00 per hour
