We look to familiar Canadian ingredients with fresh eyes, combining time-honoured techniques with modern creativity to create food that feels both rooted and unexpected.

As a Chef de Partie at ALVA, you will be responsible for leading your station with care, consistency, and a strong sense of ownership. You will work closely with the culinary team to execute dishes that reflect our exploration of Canadiana cuisine, while maintaining the standards, organization, and discipline that allow a great kitchen to function as one.
This role is about more than simply preparing food. It is about understanding why we do things, respecting the ingredients we work with, and taking pride in every plate that leaves the kitchen. You will have the opportunity to work with Canadian ingredients, explore traditional techniques, contribute ideas, and continually develop your craft alongside a passionate culinary team.
We believe a great Chef de Partie is both a cook and a caretaker of their station. You will be expected to maintain high standards of cleanliness and organization, support your fellow cooks, communicate clearly, and take responsibility for the experience we create for our guests.
- Preparing, cooking and presenting high quality dishes within the specialty section
- Preparing meat and fish
- Assisting with the management of health and safety
- Assisting with the management of food hygiene practices
- Managing and training assisting in the training of Line Cooks
- Monitoring portion and waste control
- Overseeing the maintenance of kitchen and food safety standards
