Position Summary
Eleven Revelstoke Lodge and Quartermaster Eatery is seeking a skilled and enthusiastic Breakfast & Line Cook to enhance our in-house guest culinary experience. This role is responsible for preparing and executing breakfast dishes, take-out picnic or heli lunches, and some après preparation, with an emphasis on both savory and baked goods. This position will work closely with the Executive Chef, culinary team members and the Lodge Experience team to ensure high standards of food quality, presentation, and safety.
This position requires prior experience in a fast-paced kitchen environment, proficiency in breakfast cooking and baking, and a solid understanding of food safety and sanitation, as well as Food Safe certification. The ideal candidate will be flexible, detail-oriented, and able to adapt to Eleven’s culinary style while maintaining excellence in a luxury setting. This full time, seasonal position starts at $20.50 per hour. The Winter season runs December through April.
Roles and Responsibilities
Position Purpose
The Lodge Breakfast & Line Cook plays a key role in delivering a memorable culinary experience for guests at Eleven Revelstoke Lodge. This position is responsible for preparing in-house breakfast, take-out picnic or heli lunches, some après offerings, and baking, while gaining insight into Eleven's dynamic and unique resort destinations. Additionally, the cook will occasionally support the Quartermaster culinary team with food preparations, transportation, and meal service at the Quartermaster Eatery.
Responsibilities/Duties/Functions/Tasks
Perform at a high level in a dynamic, fast-paced work environment while maintaining a respectful, calm composure and fostering a team environment.
Use strong communication skills to maintain clear communications with all culinary and Eleven staff, as well as uphold optimal operational performance.
Stay up to date and knowledgeable with the staff schedule.
Regularly check company email, thoroughly reading all emails and responding in a timely manner.
Become knowledgeable and assist the culinary team as needed in managing food inventory; stocking food inventory based on demand, shopping, receiving orders, submitting vendor invoices, and maintaining monthly inventory audits.
Become knowledgeable and assist culinary team in maintaining a clean, food-safe, and organized kitchen, ensuring all equipment is properly used and cared for while keeping an accurate and up-to-date inventory record.
Become knowledgeable and systematically execute food preparations and transportation with precision, attention to detail, and efficiency.
Interact with guests professionally and with confidence to make sure they are having the best possible experience.
Assist culinary team as needed to host special events at the Quartermaster restaurant and Eleven Revelstoke Lodge and off-site.
Be a flexible team player willing to help complete the culinary team goals and guest needs – long hours, switching days off if needed, meeting guest needs and expectations.
Qualifications
Special Position Requirements
2+ years prior food and beverage experience.
Knowledge of breakfast cooking techniques, including baking and pastry skills.
Ability to work early morning shifts, as well as weekends and holidays as required.
Flexibility to occasionally assist with culinary tasks at the Quartermaster restaurant.
Willingness to learn and adapt to Eleven’s unique culinary style and guest preferences.
Ability to maintain high standards of food presentation and consistency in a luxury setting.
Preferences
Prior experience in a high-end or boutique hotel or lodge environment.
Passion for baking and creating high-quality breakfast and baked goods.
Familiarity with local ingredients and a commitment to using fresh, seasonal produce.
Ability to take initiative and contribute ideas to enhance the guest experience.
Strong attention to detail and a commitment to excellence in all culinary tasks.
Work Requirements
Ability to stand for extended periods in a fast-paced kitchen environment.
Capacity to lift and carry up to 50 pounds regularly.
Dexterity to handle knives, kitchen appliances, and hot surfaces safely.
Tolerance for working in extreme temperatures, including hot kitchen lines and walk-in freezers.
Willingness to work in a loud and busy environment with exposure to kitchen machinery, chemicals, and fire.
Ability to work long hours, including early mornings, late evenings, and split shifts as needed.
