Job Summary
The 1st Cook is responsible for preparing high-quality dishes that exceed customer expectations in taste, presentation, and consistency. This role ensures excellence in food preparation while maintaining efficiency, timeliness, and adherence to food safety standards. The 1st Cook plays a key role in delivering an exceptional dining experience by upholding the highest standards of quality and presentation.
- Opens and/or closes kitchen in accordance with The Credit Valley Golf and Country Club opening and closing procedures.
- Prepares or directly supervises kitchen line Staff responsible for the daily execution of “specials” to ensure that methods of cooking, garnishing and portion sizes are as prescribed by standardized recipes and specific.
- Executes, guides, and assists in all preparation of line mise en place and production.
- Assumes complete charge of the line in the absence of the Jr Sous Chef, Sous Chef, Executive Sous Chef or Executive Chef.
- Assists Executive Chef with supervision and training of employees, sanitation and safety, menu planning and related production activities.
- Has the ability to work in any station as assigned by the Executive Chef.
- Prepares and co-ordinates all shift meals and staff meals when required to do so.
- Assists in maintaining security of kitchen including equipment, food, and supply inventories.
- Assists in food procurement, delivery, storage and issuing of food items.
- Assists in and expedites food orders during peak service hours when required.
- Performs the duties/tasks of all stations in the kitchen.
- Checks mise en place before service time and inspects presentation of food items to ensure that quality standards are met. Involved in pre shift and after service station checks.
- Utilizes ingredients to minimize waste and spoilage.
- Aware of the importance of food quality: taste appeal, presentation, and preparation of all food.
- Prepares food in accordance established presentation, portion, and recipe standards.
- Applies knowledge of station set up and ensures levels are adequate based on volume of business.
- Fills in any position in the kitchen whenever required.
- Applies knowledge of menu items, ingredients, and methods of preparation.
- Follows instructions during development of all recipes or otherwise instructed.
- Maintains a clean and neat work environment throughout the entire shift.
- Maintains a neat professional appearance and observes personal cleanliness rules at all times and that work areas are safe and secure.
- Cleans all areas of the kitchen. Sanitizes areas where applicable.
- Stores and rotates foods using the FIRST IN-FIRST OUT method.
- Covers, dates, and neatly stores all current and leftover products that are re-useable.
- Submits ideas for future goals, operational improvements, and personnel management to Executive Chef.
- Organizes fridges, freezers, and storeroom daily.
- Records temperatures of fridges, freezers temperatures when required to do so.
- Orchestrates daily pre shift meetings when required to do so.
- Accurately checks food deliveries and stores properly.
- Produces what is necessary on daily production and preparation lists.
- Advises Sous Chef / Executive Chef of any problems arising in his absence.
- Other duties as required.
Qualifications and Skills
- Experience in a Private Club or similar work environment; experience in a private club an asset
- Minimum of 3 years previous work experience in a similar role
- Graduate of a Hospitality program – An asset
- Completion of Red Seal Certification – An asset
- WHMIS Training – On site
- Health and Safety Sanitation Standards
- Food Handler Certification Required – On Site
- Knowledge of Labour Cost Control and Food Cost Control Perimeters
Work Environment
- Primarily operates in a fast-paced kitchen environment with exposure to heat, noise, and kitchen equipment.
- Requires extended periods of standing and physical activity.
- Must adhere to strict sanitation and safety protocols at all times.
- Collaboration with both kitchen and front-of-house teams is essential.
Job Details
Start Date: Immediately – Nov 15 approx
Hours: Full-time, Seasonal, 40h/week.
Salary: $18.50/hour + gratuities
Location: Credit Valley Golf and Country Club – 2500 Old Carriage Rd, Mississauga.
