Ryuko West is seeking dedicated and enthusiastic BOH Kitchen Staff, such as Sushi Chef, Roll Chef, Kitchen line cook, and Dishwasher, to join our team. This role is essential in supporting the daily operations of our restaurant by ensuring efficient food preparation, maintaining high standards of food safety, and assisting with meal assembly. The ideal candidate will have a passion for the food industry, a strong work ethic, and a commitment to delivering exceptional service in a fast-paced environment.
Responsibilities
- Craft high-quality nigiri, sashimi, and oversee the sushi bar line.
- Handle fish breakdown (cutting/filleting), ingredient preparation, and strict hygiene control.
- Prepare a variety of signature rolls, handle sushi bar daily ingredient prep, organize setups, and manage fast-paced orders efficiently.
- Cook and plate hot and cold food items, manage daily kitchen section prep, and maintain sanitation standards.
- Operate commercial dishwashing machinery, hand-wash large cookware/pans, and assist with general kitchen closing and cleaning duties.
Qualifications
- Prior professional experience as a Sushi Chef in a commercial kitchen is preferred (Top-tier compensation guaranteed based on experience).
- Strong sense of responsibility and excellent communication/teamwork skills.
- Beginners are absolutely welcome! Prior experience in a similar role is an asset. Must be fast-paced, reliable, and hardworking.
