The University of Saskatchewan Culinary Services is one of the largest multi-unit food service operations in the province. It consists of four main areas: Retail Operations (11 franchise and non-franchised outlets); Catering (daily deliveries, weddings, banquets, receptions, corporate catering, and high-end dinners and events); Conference (short and long-term events and stays mainly throughout the summer months) and Residential Dining (650 full meal plans and up to 2000 partial meal plans).
The main kitchen or Culinary Center is located in Marquis Hall is the hub of the operation supporting all areas of business and is also an all-you-care-to-eat open kitchen venue with multiple food stations serving 2000+ meals per day on a 28 day cycle menu.
In our kitchen, we pride ourselves on the scratch cooking approach to the food we provide (including breads, desserts, pastries, soups, sauces, stocks). Our goal is to provide fresh, wholesome and nutritious food with as much local product as possible. Our menus change regularly and consists of comfort foods along with international flavors and cultural dishes. We are in constant pursuit of learning new styles of cooking, ingredients, techniques, authentic flavors, and expanding on our skills while ensuring best kitchen practices.
We are currently looking to add a Sous Chef to our kitchen leadership team.
SALARY INFORMATION: $3248.34 to $3900.03 per month (Ancillary Services, Phase 3). The starting salary will be commensurate with education and experience.
The successful candidate will need to possess the following:
- Red Seal Journeyman Cook Certificate is required.
- Food Safe
- Five years+ proven experience leading/directly supervising a kitchen team of 10 or more in a full-scale food service operation.
- Strong ability to work effectively within a large kitchen team and adapt to multiple and regularly changing priorities
- Ability to direct and coach junior staff
- Demonstrated commitment to learning and professional growth
Completion of a recognized culinary program is an asset. Completion of a recognized food and nutrition program would also be an asset. An equivalent combination of education and experience may be considered.
