We are seeking a full-time Prep Cook / Line Cook to join our small culinary team and help with our growing venture. This role will be based in Winnipeg and will work onsite at our location at 692 St. Anne’s Road. Working hours are expected to be from early mornings to late afternoon, Tuesday to Saturday, subject to change based upon the needs of the business.
Key responsibilities include preparing and assembling bagels, sandwiches, and other menu items in a fast-paced environment. This back-of-house role will fulfill the bagel or sandwich order from start to finish, including the preparation of ingredients, toasting and cooking according to established recipes, adding lifts (cream cheeses, jams, and spreads), and maintaining a clean, sanitary, and organized kitchen. Tasks will be repetitive, fast-paced, and require standing for long periods of time. The role will report to the Sous Chef and work in a small kitchen, among a small team of bakers and baristas.
Business operating hours are currently 7:00am-2:00pm, Tuesday-Saturday; this role will work the appropriate full-time hours to accommodate business operations. The shift is expected to be between 6:30AM – 3:00PM with a thirty (30) minute lunch break, subject to change based upon the needs of the business.
Responsibilities:
- Prepare a wide variety of bagel/sandwich/menu items, following standardized recipes and production guidelines to ensure all orders meet artisan quality standards, including taste, texture, temperature, and presentation. Tasks will be repetitive and fast-paced.
- Operate basic kitchen equipment such as toaster, mixers and rapid ovens.
- Assemble and garnish bagels and sandwiches to ensure an attractive and appealing presentation, while also controlling portion sizes.
- Set up and stock the workstation with necessary ingredients, tools, and supplies before and during shifts.
- Follow all food safety and sanitation regulations, maintaining a clean and organized work area, and properly handling and storing food.
- Monitor inventory levels, perform checks, complete storage logs, and report any shortages to management.
- Clean and sanitize cooking surfaces, equipment, and utensils, and report any damaged equipment.
- Package products attractively while ensuring freshness.
- Work effectively with other kitchen staff, management, and servers, especially during high-pressure service periods, to ensure timely and accurate order fulfillment.
- Take direction from the Sous Chef and execute specific tasks to ensure a smooth workflow in the kitchen.
- Adopt The Forge philosophy of excellent customer service and friendly attitude at all times.
- Other tasks and duties assigned by the Sous Chef.
Qualifications:
- Experience as a prep cook, line cook, or in a related culinary role, particularly in a fast-paced setting.
- Proficient knife handling skills and the ability to operate standard kitchen equipment safely and efficiently.
- Meticulous focus on recipes, portion control, and food preparation.
- Exceptional multitasking and organizational skills to manage multiple orders simultaneously during peak hours.
- Effective interpersonal skills to coordinate with the Sous Chef and front-of-house staff.
- Ability to stand and walk for long periods, and lift up to 35 lbs.
- Knowledge of food safety and sanitation practices including valid Canadian food handler’s certificate.
- Reliable and punctual for early morning start times.
- A positive attitude, the ability to take direction and follow instructions, and work consistently and efficiently as part of a team.
Compensation:
Starting salary for base level candidates is between $40,000.00 - $45,000.00 per year (or an equivalent of $19.00-22.00 per hour).
