Begin every shift in a clean, pressed and complete uniform.
● Follow all Swiss Chalet recipes noting correct ingredients, quantities (using the appropriate measurement tools), and
processes.
● Ensure the quality of food is outstanding each and every time and that product is prepared quickly and efficiently with pride
and attention to detail.
● Maintain product levels to ensure we never run out of product on the line; make sure that the line is always “Guest Ready”
before each revenue period.
● Communicate with the other Line Cooks to keep everything running smoothly and efficiently, while maintaining product
quality, flow and speed of service for both Dining Room and Off Premise meals.
● Recover service errors quickly by prioritizing re-cook chits and ensuring a perfect quality re-cook.
● Conduct and record all required cooking, holding, and 2-step chilling temperatures to ensure food safety standards are
never compromised and CCP Logs are kept up-to-date.
● Check equipment temperatures (line fridge, line freezer, grill, fryer, etc.) to ensure food quality and Guest safety.
● Hold foods no longer than the maximum shelf life for each product. We depend on you to make sure that our Guests always
receive fresh, consistent product.
● Inspect the final plating to ensure everything is plated or packaged to standard.
● Maintain fryer oil throughout shift by skimming often & completing a quick filter when prompted.
● Perform grill cleaning on a regular basis. A well-maintained grill makes your job easier and safer, and it helps you produce
quality products that meet our standards.
● Peel and store cooked chicken for use in other recipes as per the standards.
● Control waste and spoilage by preparing products properly and storing to standard using FIFO (“First-In First-Out”) rules.
● Complete the Waste Sheet as required.
● Keep your work areas/station and materials clean and sanitized at all times.
● Maintain organization of all food storage areas (following HACCP) and adhere to cleaning schedules as assigned.
