The position will be responsible for preparing and mixing dough for the next shift, pre shaping and shaping the dough by hand and ensuring correct measurement and sizing, and baking the prepared dough using the oven with correct temperature.
Skills and Qualifications

2+ years of professional baking experience required

Experience with high hydration is an asset

Strong experience in bread production and artisan dough preparation

Thorough understanding of dough development, including hand shaping, pre-shaping, and final shaping techniques

Knowledge of preferments, including biga, poolish, and levain/lievito madre methods

Experience with various kneading and mixing techniques and understanding their impact on gluten structure and fermentation

Solid understanding of fermentation management, proofing, hydration levels, and temperature control throughout the production process

Ability to assess dough condition and make adjustments based on environmental factors such as temperature and humidity and ingredient temperatures

Experience working with naturally fermented and yeasted doughs is an asset

Strong attention to detail, consistency, and product quality

Ability to work efficiently in a fast-paced production environment
Key Responsibilities

Prepare, mix, and develop doughs for daily production and upcoming shifts

Scale ingredients accurately and maintain recipe consistency

Monitor and manage fermentation schedules, dough temperatures, and proofing cycles

Pre-shape and hand-shape doughs to company standards

Bake products using wood-fired and/or commercial ovens, ensuring proper baking times and temperatures

Maintain a clean and organized workstation while following food safety standards

Conduct daily inventory counts and report shortages or ordering needs

Contribute to continuous improvement of bread quality and production processes
