Experienced Pizza Maker

The position will be responsible for preparing, stretching, topping, and baking pizzas to the highest quality standards. The successful candidate will have experience working with high-hydration doughs, understand the nuances of fermentation and dough handling, and be skilled in managing longer bake times in lower-temperature ovens. This role requires attention to detail, consistency, and the ability to execute a premium pizza program in a fast-paced kitchen environment.

Skills and Qualifications

2+ years of experience as a Pizza Maker in a professional kitchen
Strong experience working with high-hydration doughs and naturally fermented pizza dough
Thorough understanding of dough fermentation, proofing, dough ball management, and dough handling techniques
Experience stretching and shaping pizzas while maintaining proper structure and hydration characteristics
Understanding that this style of pizza requires controlled, longer bake times rather than a traditional 90-second Neapolitan bake
Ability to manage oven temperatures, baking schedules, and timers to ensure consistent results
Knowledge of moisture management, crust development, and achieving proper water evaporation during the baking process
Strong understanding of food safety, sanitation, and proper food storage procedures
Excellent attention to detail and commitment to product quality
Ability to work efficiently and maintain consistency during busy service periods
Strong communication and teamwork skills
Ability to multitask and remain organized in a fast-paced kitchen environment
Flexible availability, including evenings, weekends, and holidays

Key Responsibilities

Prepare, stretch, top, and bake pizzas according to established recipes and quality standards
Monitor dough fermentation, proofing schedules, and dough inventory to ensure optimal product quality
Work confidently with high-hydration doughs while maintaining consistency in shaping and handling
Operate ovens using established temperature and timer protocols to achieve proper bake characteristics
Understand and execute longer bake profiles designed to evaporate excess moisture and develop texture, structure, and flavour
Maintain consistency in crust colour, bake quality, and overall presentation
Prepare and organize ingredients for service, ensuring freshness and proper rotation
Maintain a clean, organized, and fully stocked pizza station
Follow food safety, sanitation, and health regulations at all times
Assist with inventory management, product rotation, and ordering requirements
Support fellow kitchen team members during service and prep periods
Contribute to maintaining a positive, professional, and collaborative kitchen culture
