Holiday Inn Toronto International Airport is looking for an experienced and passionate Executive Sous Chef to join our culinary leadership team at a full-service hotel featuring 451 guest rooms, multiple food and beverage outlets, and over 20,000 square feet of banquet and event space. Reporting directly to the Executive Chef, the Executive Sous Chef will oversee daily kitchen operations, banquet production, restaurant service, and culinary team development while ensuring the highest standards of food quality, safety, and financial performance.
Overview:
As Executive Sous Chef, you will be a key member of the culinary leadership team, overseeing all aspects of kitchen operations including restaurant, banquet, and stewarding functions, while maintaining the highest standards of food safety, sanitation, and workplace safety. Working closely with the Executive Chef, you will drive excellence in food quality, consistency, innovation, and guest satisfaction while ensuring operational efficiency and financial performance. You will lead, mentor, and develop a team of culinary professionals, fostering a culture of collaboration, accountability, and continuous improvement. The Executive Sous Chef plays a critical role in managing food and labor costs, inventory controls, production planning, menu execution, and large-scale event operations, ensuring exceptional experiences for guests and successful outcomes for the business.
The ideal candidate is a passionate culinary leader with strong hotel and banquet experience, exceptional organizational skills, and a proven ability to thrive in a fast-paced environment while delivering outstanding results across both day-to-day operations and large-scale events.
Key Responsibilities:

Oversee food preparation methods, portion control, quality standards, and production timelines to ensure consistency and profitability.

Assist in developing, testing, and implementing new menu items and recipes while maintaining accurate recipe documentation and food costing.

Monitor food usage and inventory levels to minimize waste and maximize profitability.

Maintain controls and procedures for the secure storage of food products, kitchen inventory, equipment, and supplies.

Manage food, labor, and operational costs in alignment with departmental budgets and hotel objectives.

Prepare production reports, forecasts, and operational plans for senior leadership review.

Support large-scale banquet, conference, wedding, and special event operations while ensuring seamless execution.

Lead, mentor, and inspire a diverse culinary team.

Plan and assign daily work schedules while ensuring appropriate staffing levels for business demands.

Establish performance expectations and provide coaching, feedback, and development opportunities.

Foster a positive and collaborative work environment that promotes teamwork, accountability, and professional growth.

Assist in recruiting, onboarding, training, and retaining top culinary talent.

Manage employee performance and support conflict resolution when required.

Ensure exceptional food quality, presentation, consistency, and service standards across all culinary operations.

Ensure full compliance with all food safety, sanitation, health, and safety regulations.

Maintain cleanliness and operational readiness of all kitchen equipment and facilities, including cooking lines, refrigeration units, storage areas, and banquet production spaces.

Conduct regular inspections to ensure adherence to hotel standards and government regulations.

Partner with Engineering and Facilities teams to address maintenance and repair needs promptly.

Diploma, Degree, or Certificate in Culinary Arts.

Minimum 3 years of experience as a Sous Chef within a full-service hotel with significant banquet and conference facilities.

Demonstrated experience managing food and labor costs, budgeting, forecasting, and inventory controls.

Experience working in a unionized hospitality environment

Food Handler Certification.
-
Red Seal Certification preferred.
