Duties and responsibilities:
- Responsible for overseeing the daily preparation, production, and presentation of food items for service
- Assist chef with daily production (veinosseries, entremets, macaron, cookies, etc.)
- Work closely with Chef to recruit and train new pastry cooks
- Help to manage a team of pastry cooks to ensure proper execution and preparation of products
- Accountable for inventory management and cost control
- Maintains sanitation standards throughout the kitchen to comply with Provincial regulations
- Ordering product and maintaining appropriate ingredient levels
- Complete assigned daily prep items with high quality and fresh ingredients
- Maintain an organized and clean prep/work area meeting Food Safe Standard
- Assemble & design cakes for pre-orders and store displays
- Work closely with teammates to support the completion of daily cleaning tasks
- Sample ingredients, mix, and finished products to ensure standards, quality and created flavor profiles are met
- Ability to learn and adapt to new tasks quickly
- Ability to work in a fast-paced environment and multitask
- Presenting baked pastry goods in a visually appealing and professional manner.
- Work with management and staff to create new recipes. Design and execute innovate new seasonal entramet, pastry
- Ensure proper rotation of stock (FIFO)
Experience Required:
- Red Seal or equivalent required
- Diploma/Certification in a culinary discipline
- Skilled in sugar & chocolate work an asset
- 3 years experience in fast paced patisserie environment
- 1 year experience in a leadership role is preferred
- Food Safe Level 1 is required
- Experience delivering on the spot coaching and feedback required
- Adaptability, flexibility, and a willingness to create seasonal menu with creativity designs
- Demonstrated commitment to creating an exceptional employee experience
- Ability to be mobile on the kitchen floor for extended periods of time (8 hours)
- Ability to lift medium to large items, up to 50 pounds, while using appropriate equipment and safety techniques
- Availability to work a flexible schedule, including weekends, holidays and occasionally with early mornings
