The Opportunity
As Locale enters an active transition & growth phase, we are hiring for a new position of Chef de Cuisine at Locale Aurora. We are seeking a culinary leader who will define the next chapter for that location.
In this role you will manage and lead the BOH team and oversee daily operations of a professional, high volume, quality focused scratch kitchen.
You will be guided through an initial training and support period led by our exiting Executive Chef.
Key Responsibilities & Expectations
Culinary:
- To execute Italian-inspired dishes for menu development, features and seasonal updates, using proper ingredients and cooking methods and ensure consistent, clean, modern, plating style that highlights ingredients and best reflects the brand.
- You will have the opportunity and autonomy to elevate and influence the culinary direction as you advance and integrate into the role.
Operations:
- Manage BOH scheduling to ensure labor targets and team satisfaction are met without compromising kitchen standards.·
- Manage food costs, inventory levels, ordering accuracy, and waste control.·
- Delegating tasks and responsibilities to Sous Chef & core team with oversight.·
- Regularly inspecting equipment, electrical cords, and appliances
- Implementing a strict cleaning schedule and enforce food safety, sanitation, temperature controls and keep a safe inspection-ready kitchen.
- Ensure the FIFO system is followed for inventory and proper food storage
Collaboration & Communication:·
- Maintain regular and effective communication with FOH & event managers to ensure details and service goals are met
- Conduct productive pre shift briefings and new menu tastings with FOH team.
- Keep clear constructive notes, topics for discussion to present at manager meetings.
- Check in regularly with your BOH team to invite feedback, address concerns, highlight achievements, present challenges, assign new tasks to create learning opportunities
Requirements
- 3+ years experience as a CDC / Chef / Senior sous / chef / kitchen manager of a full-service, high-volume scratch kitchen
- Proven ability to manage scheduling, inventory, food & labour cost, menu pricing
- Ability to thrive in a fast-paced, high-pressure environment
- Strong organization, communication skills
- Food Handler Certification
- Physically able and have Flexible availability to work full time 50 hrs/ week (days, evenings, weekends, holidays)
- Must be legally eligible to work in Canada
- Must have reliable form of transportation to commute to Aurora
STARTING Compensation
$68,000.00 to start - plus generous gratuity share
