Position Summary

The Pastry Chef de Partie is responsible for the daily production of high-quality pastries, desserts, breads, and specialty baked goods while supporting the Pastry Chef in the operation of the pastry department. This position ensures consistent quality, food safety, presentation, and production standards while assisting with seasonal product development and mentoring junior team members. The role is hands-on and requires creativity, organization, efficiency, and attention to detail.

Key ResponsibilitiesPastry & Bakery Production

· Prepare a wide variety of pastries, cakes, cookies, tarts, breads, desserts and seasonal specialty products.

· Produce products according to standardized recipes and quality specifications.

· Maintain consistency in taste, appearance, portioning and presentation.

· Decorate cakes, pastries and desserts to a professional retail standard.

· Assist with development of new products and seasonal menu items.

· Ensure pastry displays remain fully stocked, attractive and properly rotated (FIFO).

· Monitor production levels to maintain inventory while minimizing waste.

Kitchen Operations

· Organize daily production schedules with the Pastry Chef.

· Ensure all food is prepared, stored and handled according to food safety regulations.

· Monitor ingredient inventory and communicate ordering requirements.

· Maintain cleanliness and organization of the pastry kitchen and equipment.

· Report equipment issues or maintenance concerns promptly.

Leadership & Teamwork

· Assist with training on recipes, decorating techniques and production methods.

· Maintain efficient workflow during busy production periods.

· Collaborate with other kitchen departments to meet customer demand.

Quality & Food Safety

· Perform quality checks throughout production.

· Follow sanitation, WHMIS and occupational health and safety procedures.

· Ensure all products meet Italian Market quality standards before sale.

· Minimize waste through proper production planning and inventory rotation.

Qualifications

· Culinary or Baking & Pastry diploma, or equivalent training.

· Minimum 2–3 years of professional pastry or bakery experience.

· Strong cake decorating and finishing skills.

· Experience producing breads, pastries and desserts in a commercial environment.

· Excellent organizational and time management skills.

· Ability to work independently with minimal supervision.

· Ability to lift up to 25 kg (55 lbs) and stand for extended periods.

· Food Handler Certification (or willingness to obtain).

Preferred Qualifications

· Experience in artisan baking or European-style pastry.

· Experience working in a retail bakery or café environment.

· Experience with seasonal menu development.

· Supervisory or team leadership experience is an asset.
