Broken Hill is looking for a sous chef to take over PM kitchen operations. Experience with high volume line cooking is a must. The Position: Reporting to the head chef, the sous chef is responsible for managing the kitchen staff and leading the team in the absence of the head chef. Always bringing an excellent attitude and professional manner, this person leads by example. Ensuring exceptional food quality and service at all times, the sous chef will train staff and supervise the preparation, cooking and presentation of all menu items in accordance with BH recipes and specifications. The sous chef is also responsible for supervising and ensuring kitchen cleanliness, safety, sanitation and organization during their shift, in accordance with BOH training manuals and Food-Safe / HAACP regulations. The sous chef is responsible for assisting the Head Chef with inventory and waste management, and ordering product as needed.

Essential Responsibilities:
- Oversee the preparation, cooking and plating of all menu items as per BH recipes.
- Maintaining the highest standard of cleanliness, food safety and service at all times.
- Manage all aspects of kitchen operations in the absence of the head chef and report any issues immediately. Includes supervision of other kitchen staff, monitoring inventory and prep levels, portion control and food quality.
- Ensuring all daily checklists are filled in accurately and communicating any issues to the chef.
- Complete line checks to ensure food quality and adequate mise-en-place for all stations prior to each service.
- Ensure all stations are clean and stocked for shift changes.
- Assist chef with ordering and inventory as needed.
- Assist chef in the creation of daily specials and new menu items.
- Inform chef of any inventory shortages or quality issues immediately.
- Maintain a positive, productive and respectful atmosphere in the kitchen at all times.
Requirements:
- Minimum of 3 years experience in leadership/management roles in professional kitchens
- Must be able to work with minimal supervision.
- Food Safe Level 1 (level 2 an asset).
- Culinary diploma or Red Seal, or equivalent professional experience.
- Must maintain clean and professional appearance at all times.
- Must provide satisfactory references
