Onua Bakery & Café is growing.
We are looking for a talented Pastry Chef / Viennoiserie Baker who is passionate about pastry, laminated doughs, quality ingredients, and creating beautiful products at scale.
Our menu includes croissants, pastries, cakes, cookies, specialty desserts, and evolving seasonal products inspired by artisan and African bakery traditions.
We’re looking for someone who wants more than production—we want someone who wants to contribute ideas and help build.
What You’ll Do
- Produce croissants, laminated doughs, danishes, pastries, cakes, cookies, and desserts
- Execute mixing, sheeting, laminating, proofing, baking, and finishing
- Support product development and seasonal launches
- Maintain consistency, quality, and presentation standards
- Organize production and prep schedules
- Maintain inventory and ingredient organization
- Support and train junior team members
Must Have
- 2+ years pastry, viennoiserie, or bakery production experience
- Experience working with laminated doughs or pastry production
- Strong attention to detail
- Comfortable in fast-paced production environments
- Positive and collaborative attitude
Strong Assets
- Experience in artisan bakeries
- Experience with croissants and viennoiserie
- Cake production and finishing
- Product development experience
- French language skills

- How many years of professional experience do you have producing viennoiserie (croissants, pain au chocolat, danishes, etc.) in a commercial bakery or pastry kitchen?

- What are the most common causes of poor croissant structure (for example butter leaking, uneven honeycomb crumb, or dense layers), and how do you correct these issues?
