Full job description

A leader in elevated dining experiences & events, Locale Restaurants/Bars are well established in York Region as both vibrant neighbourhood gems and destination hotspots.

The Opportunity

As Locale enters an active transition and growth phase, we are are seeking a culinary leader to step into the newly established Chef de Cuisine position at the Locale Aurora location.

In this role you will manage and lead a BOH team and oversee daily operations of a professional, high volume, quality driven & Italian focused scratch kitchen.

Culinary:

To create and execute Italian-inspired menus, using proper ingredients, flavour profiles, cooking techniques, and ensure consistent, clean, modern plating style
You will have the opportunity and autonomy to elevate and influence the culinary direction as you advance and integrate into the role.

Operations:

Manage BOH scheduling to ensure labor targets and team satisfaction are met without compromising kitchen standards.·
Maintain food costs, inventory levels, ordering accuracy, and waste control.·
Delegating tasks and responsibilities to core team with oversight.·
Implementing a strict cleaning schedule and enforce food safety, FIFO system, sanitation, temperature controls and keep a safe inspection-ready kitchen.

Collaboration & Communication:·

Maintain regular and effective communication with FOH & event managers to ensure details and service goals are met
Conduct productive pre shift briefings and new menu tastings with FOH team.
Keep clear constructive notes, topics for discussion to present at manager meetings.
Check in regularly with your BOH team to invite feedback, address concerns, highlight achievements, present challenges, assign new tasks to create learning opportunities

Requirements

3+ years experience as a CDC / Chef / Senior sous / Culinary manager of a full-service, high-volume scratch kitchen
Proven ability to manage scheduling, inventory, food & labour cost, menu pricing
Strong organization, communication skills
knowledge of Italian ingredients, flavour profiles and cooking techniques
Food Handler Certification
Physically able and have Flexible availability to work full time 48 hrs/ week (days, evenings, weekends, holidays)
Must be legally eligible to work in Canada
Must have reliable form of transportation to commute to Aurora

STARTING Compensation

$70,000.00 to start - plus gratuity share
