Overview
As Pastry Chef, you will lead all pastry and bakery operations, from daily production to menu innovation. With an eye for detail and a commitment to quality, you will ensure every dessert not only meets but exceeds DoubleTree by Hilton standards. Your leadership in cost control, sanitation, and team coordination will keep our kitchen running smoothly while delivering exceptional guest experiences.
What You’ll Do
- Supervise and participate in the preparation of all in-house desserts, ensuring adherence to DoubleTree by Hilton standards of quality and presentation.
- Oversee all pastry and bakery operations, including menu creation and execution for hotel functions.
- Ensure proper setup and readiness of all menu items.
- Follow staffing guidelines, prepare production sheets, and coordinate Banquet Event Orders (BEOs) with associates.
- Plan and requisition food in collaboration with the Executive Chef.
- Maintain high standards of safety, hygiene, and sanitation in all areas of the bake shop.
- Foster effective communication with guests, colleagues, and supervisors, handling challenges with professionalism.
- Report to the Executive Chef on dessert production, including prepared, served, and returned items.
- Ensure stations and the kitchen are clean and prepared for the next day.
- Control food costs through accurate ingredient tracking, Cost Guard, FIFO, and waste control practices.
- Create and cost all menu items using the food inventory and recipe program to align with budgeted food costs.
- Uphold all hotel policies and procedures, including grooming, attendance, and safety standards.
- Promote a positive image of SilverBirch Hotels through professionalism and teamwork.
- Perform other duties and projects as assigned by leadership.
What You Bring
- Certificate in culinary arts, pastry-making, baking or relevant field
- 3 years of experience as a Pastry Chef in a full-service property or restaurant
- Proven experience as Pastry Chef, baker or similar leadership role
- Great attention to detail and creativity
- Organizational and time management skills
- Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
- Strong creativity and technical skills in dessert preparation, plating, and menu innovation.
- Knowledge of cost control systems and recipe/inventory management.
- Ability to lead a team with strong organizational and communication skills.
- Commitment to hygiene, food safety, and health regulations.
- Flexibility to adapt to event needs and work in a fast-paced environment.
Working Conditions
- Standing, walking, bending, and moving for extended periods throughout shifts.
- Lifting, carrying, pushing, or pulling items up to 25 lbs. without assistance.
- Early mornings (6 AM to 2:30 PM), weekends, and holidays may be required based on operational needs.
- Requires use of kitchen equipment, ovens, mixers, and tools in high-heat environments.
