Full job description

The Clayfield is a new 102-room luxury boutique hotel opening in Niagara-on-the-Lake and part of the Unbound Collection by Hyatt. The hotel will deliver a highly personalized, refined guest experience grounded in calm luxury, craftsmanship, and a strong sense of place, with dining and gathering playing a central role in that vision.

The Clayfield has partnered with Ascari Hospitality Group for all food & beverage operations including Terrain Restaurant, lobby lounge, Terrace, in-room dining, banquets, and off-site catering.

Ascari Hospitality Group is seeking a Pastry Chef. Reporting to the Executive Chef, this role is responsible for the overall leadership, operation and performance of all food production and execution for Terrain restaurant, including in-room dining.

Located amongst the vineyards of Niagara on the Lake in the heart of Ontario’s wine country, our boutique hotel restaurant offers an intimate casual fine-dining experience. We will be a wine country restaurant that focuses on the local produce of Niagara and offering the best of the seasons. Approachable yet refined, the cuisine will be a thoughtful expression of the best that this region has to offer. We will be building a team of energetic and professional cooks who will be executing this vision everyday. We’re looking for a leader who is ready for the challenge.

Job Summary:

The Pastry Chef is responsible for conceptualizing, preparing, and presenting refined desserts and pastries for Terrain restaurant and The clayfield hotel culinary operations. This role demands creativity, precision, and a deep understanding of flavor profiles and visual aesthetics. The Pastry Chef collaborates closely with the Executive Chef and kitchen team to deliver a consistent, luxurious, and memorable guest experience through exceptional pastry offerings.

Key Responsibilities:

Colaborate with Executive chef and Design and execute innovative dessert menus for the fine dining restaurant, special events and banquets.
Create artisanal pastries, plated desserts, breads, petits fours, and confections that reflect seasonal ingredients and the brand’s culinary identity.
Develop in house bread program
Develop tasting menus and dessert pairings in collaboration with the Executive Chef and Sommelier.
Maintain impeccable presentation standards and ensure every dessert meets the restaurant’s artistic and flavor expectations.
Supervise pastry kitchen operations—training, scheduling, and mentoring junior pastry staff.
Monitor ingredient quality and maintain precise inventory and cost control.
Liaise with suppliers to source premium ingredients and specialty items.
Implement and maintain strict food safety, hygiene, and sanitation standards.
Contribute to special hotel events such as weddings, and private dining experiences.
Stay attuned to global pastry trends and innovate with modern techniques, plating styles, and flavor combinations.

Qualifications & Skills:

Degree or diploma in Pastry Arts, Culinary Arts, or equivalent professional training.
Minimum 3–5 years of experience in a luxury hotel or fine dining establishment.
Expertise in advanced pastry techniques, flavor pairing, and modern plating.
Strong artistic sense and eye for visual presentation.
Solid leadership, communication, and organizational abilities.
Ability to manage multiple production schedules while maintaining quality control.
Knowledge of contemporary dessert trends, international pastry styles, and boutique hotel service standards.
Passion for creating memorable guest experiences through dessert craftsmanship.
Food and wine pairing knowledge is an asset
Knowledge of local and seasonal ingredients is required

Work Environment:

High-end restaurant and boutique hotel setting.
Fast-paced but detail-oriented kitchen with emphasis on collaboration and precision.
Early mornings, evening service, weekends, and holiday shifts may be required.

Pay: $58,000.00-$60,000.00 per year
