THE ROLE
We're seeking an accomplished Executive Chef to lead our kitchen team and elevate our culinary reputation. This role demands hands-on leadership during high-volume dinner service, team mentorship, and creative menu development.
KEY RESPONSIBILITIES:
- Command the line during dinner rushes and maintain expediting duties
- Coach and develop junior culinary staff and line cooks
- Design seasonal menu items and daily specials
- Manage food costs (28-32%), inventory, and supplier relationships
- Collaborate with General Manager on budgets and P&L
- Work seamlessly with Front of House to ensure exceptional guest experiences
- Maintain food safety protocols (HACCP, health regulations)
- Support private events at Capitol 33

REQUIRED QUALIFICATIONS
- 5+ years progressive culinary experience in upscale casual or fine dining
- 3+ years in Head Chef, Executive Chef, or Sous Chef role
- Proven track record leading kitchen teams through high-volume service
- Red Seal Certification or culinary degree strongly preferred
- Current Food Handler's Certification and HACCP training
- Strong understanding of kitchen economics and cost control
- Expertise with seafood, steaks, pasta, and dessert preparations
