The Dishwasher is responsible for maintaining cleanliness and sanitation standards in a fast-paced, high-volume commissary kitchen that produces large-scale catering orders. This position plays a vital role in keeping kitchen operations efficient by ensuring all dishware, cookware, and food preparation equipment are properly cleaned, organized, and available for use.
Key Responsibilities:

Wash, sanitize, and properly store all dishes, utensils, pots, pans, and catering equipment using commercial dish machines and three-compartment sinks.

Maintain cleanliness and organization of the dishwashing area, floors, drains, walls, loading dock, and trash disposal stations.

Assist with receiving and storing deliveries by breaking down boxes, organizing inventory, and removing packaging waste.

Monitor dishwashing supplies (detergents, sanitizers, gloves) and communicate needs to supervisors.

Ensure proper handling and care of large catering equipment such as sheet pans, racks, chafing dishes, and platters.

Support culinary team by returning clean wares quickly and assisting with light prep or packaging as directed.

Follow food safety and sanitation guidelines in compliance with the health department, and company standards.

Safely operate dishwashing and cleaning equipment; immediately report any maintenance or safety concerns.

Assist with end-of-shift breakdown, including sweeping, mopping, and waste removal of all departments in the commissary kitchen.

Perform other duties as assigned to support commissary operations.
Qualifications:

Previous dishwasher, steward, or porter experience in a high-volume kitchen preferred.

Ability to work in a fast-paced environment with heavy workloads and strict timelines.

Physically able to stand for extended periods, bend, lift, and carry up to 50 lbs.

Knowledge of commercial kitchen sanitation and safety procedures an asset.

Dependable, punctual, and able to work well with a team.
Work Environment:

High-volume catering production setting (large equipment, hot and humid conditions).

Fast-paced, team-oriented, deadline-driven.

Shifts will include early mornings, weekends, and/or all major holidays.
