Full job description

Position Summary

The Junior Sous Chef is a leader in the kitchen and provides support to team by overseeing all food outlets and Banquet caterings throughout the kitchen and the day-to-day operations while training and coaching team members. Ensuring the compliance of kitchen standards, the Sous Chef delivers on the Executive teams’ vision for the culinary experience at Nita Lake Lodge. Reports to Chef de Cuisine, Executive Sous Chef

Job Duties

Responsible for the complete kitchen operation in absence of the Executive Sous Chef or Chef de Cuisine.
Supervise, expedite, cook and plate dishes on the line during service as required to support team, ensuring consistency and quality.
Promote open and effective communication during service between kitchen team & expeditors / floor staff.
Troubleshoot & support team members during service.
Proficient at Garde Manger & Hot Apps station.
Proficient at Grill station
Proficient at Sautee station.
Proficient at Call / Plate / Expo
Proficient at Sauce Production.
Proficient at Butchery.
Conduct line checks prior to service
Manages closing prep lists.
Acts as a trainer for all stations
Manages Health & Safety Audits / Temperature Logs.
Conduct line checks prior to service
Manage, maintain and delegate prep & par levels
Manage and/or Assist with events, menu and tastings.
Manage, assist and delegate duties to the kitchen team accordingly
Ensure consistent food preparation and the highest caliber of food presentation.
Ensure cleanliness and hygiene is maintained in the various kitchen areas including refrigerators, storerooms and loading dock, and that food products are rotated to ensure high standards of freshness.
Order and inventory food on an ongoing basis to ensure adequate resources are in-house, par levels are maintained, and food costs are managed properly.
Respond in a positive and timely manner to all internal & external guest requests and feedback.
Uphold a safe working environment and participate in company-wide Health & Safety initiatives.
Lead shifts and ensure staffing levels are maintained and adjusted day to day to make sense for the current and upcoming volume of business.
Strong and effective communication with all departments to ensure all are aware of day-to-day updates.
Ensure that the morale of the kitchen staff is maintained
Ensure that maintenance issues are managed, resolved & maintained by consistent auditing, communicating issues to management team and co-ordinating with engineering team to problem solve.
Problem solve & be solution oriented,

Knowledge, Skills, Abilities

Culinary Education including Red Seal or the equivalent experience
Food Safe Certification
Minimum of 3 years' experience in a kitchen, preferably in a leadership capacity
Passion for food with strong culinary skills
Excellent communication and interpersonal skills
Ability to exert physical effort and endure abundant physical movements
Flexibility with schedule to fill business requirements

Job Types: Full-time, Permanent

Pay: $52,000.00-$56,000.00 per year
