Full job description

Operating in the hospitality and restaurant industry for nearly 50 years, Gray Collection is an award-winning group of authentically local hotels and restaurants that offer travelers from around the world the experience of friendly luxury. Among our establishments are Maggie Oakes, Jacopo, Vieux-Port Steakhouse, Pincette, Bevo Bar+Pizzeria, Restaurant Gaspar, Terrasse le Perché, Terrasse William Gray, and Terrasse sur l’Auberge.

The Cook 1 at Cocotte Bistro is responsible for preparing high-quality dishes in accordance with the restaurant’s standards and recipes. This role requires strong culinary skills, attention to detail, and the ability to work efficiently in a fast-paced environment while maintaining consistency and excellence in execution.
Key Responsibilities

Prepare, cook, and present menu items according to Cocotte Bistro standards and recipes
Ensure consistency, quality, and presentation of all dishes served
Set up and maintain workstation with proper mise en place
Follow food safety, hygiene, and sanitation guidelines at all times
Monitor inventory levels and communicate shortages to the Sous-Chef or Chef
Assist in receiving and storing deliveries properly
Maintain cleanliness and organization of the kitchen and workstations
Collaborate with team members to ensure smooth service operations
Adhere to portion control and minimize food waste
Support junior kitchen staff when required

Qualifications & Skills

Minimum 2–3 years of experience in a professional kitchen (preferably in a bistro or French cuisine setting)
Culinary diploma or equivalent experience is an asset
Strong knowledge of cooking techniques, food safety, and kitchen operations
Ability to work under pressure in a fast-paced environment
Excellent teamwork and communication skills
Attention to detail and commitment to quality
Flexible availability, including evenings, weekends, and holidays
