Breton Crafthouse is seeking experienced and passionate Pizza Cooks to join our dynamic culinary team. If you thrive in a fast-paced kitchen, take pride in scratch cooking, and are an expert in pizza dough, this is your opportunity to shine.
The Role: Pizza Cook
As a Pizza Cook at Breton Crafthouse, you will be responsible for leading the pizza station from prep to fire to finish. You’ll work closely with our kitchen team to maintain high standards and bring our pizza program to life.
You are a master of dough. You are a confident, talented pizza cook with 3–5 years of hands-on experience working with traditional pizza methods. You know your way around fermentation, dough stretching, and high-temperature execution. You understand how consistency, timing, and preparation translate into exceptional pizza. You work well under pressure, maintain a clean station, and take pride in every pie you serve.
Responsibilities Include:
- Dough Mastery: Preparing and handling dough with consistency, including proofing, portioning, and stretching.
- High-Temp Oven Operation: Managing temperature and bake times to produce perfectly cooked pizzas every time.
- Topping & Assembly: Executing pizza builds quickly and accurately according to specs.
- Prep & Par: Ensuring all mise en place is prepped to standard and maintained throughout service.
- Consistency: Following all recipes and procedures for sauces, toppings, dough, and bake.
- Cleanliness: Maintaining an impeccably clean station and oven area throughout service.
- Team Collaboration: Working with cooks and leadership to execute smooth service and communicate kitchen needs in real time.
What We’re Looking For
- Experience: 3–5 years of experience working with pizza in a high-volume scratch kitchen is required.
- Oven Expertise: Able to manage intense oven temperatures and timing.
- Dough Handling: Skilled in hand-stretching, fermentation, and working with high-hydration dough.
- Speed & Precision: Able to produce consistent results during high-volume rushes.
- Dependability: Punctual, clean, and a strong communicator.
- Collaborative: Demonstrates the ability to work effectively within a team environment and remains open to feedback and new ideas.
- Food Safety: Valid Food Safety certification is required. Keeping an up to date certification is a requirement of maintaining employment.
