At OLIVĒTTE, baking is at the heart of everything we do.
We are building a modern European and Pan-Mediterranean bakery rooted in craftsmanship—where naturally fermented breads, laminated pastries, elegant desserts, and the flavours of the Mediterranean come together under one roof.
Our pastry program will combine European technique with a distinctive OLIVĒTTE point of view: beautifully laminated croissants, seasonal viennoiserie, cakes and tarts, choux, cookies and petits fours, alongside pastries inspired by ingredients and traditions from across the Mediterranean.
We're looking for a talented Pastry Chef who is passionate about the craft and excited by the opportunity to help shape a pastry program from the ground up.
This role is for someone who cares about the details: the honeycomb inside a croissant, the balance of sweetness and acidity in a tart, the texture of a cream, the precision of a finish, and the way an entire pastry display comes together.

What You'll Do
As Pastry Chef, you'll play a key role in the daily production, quality, development, and presentation of OLIVĒTTE's pastry and viennoiserie program.
Your responsibilities will include:
- Produce a wide range of handcrafted pastries, viennoiserie, cakes, tarts, desserts, cookies, and specialty baked goods.
- Prepare and work confidently with laminated doughs, including croissants and other viennoiserie.
- Shape, proof, bake, fill, finish, garnish, and decorate products to consistently high standards.
- Contribute to seasonal collections, holiday offerings, new product launches, and limited-edition pastries.
- Maintain exceptional consistency in flavour, texture, appearance, portioning, and finishing.
- Follow established recipes while contributing ideas for improving products and developing new ones.
- Plan daily production according to anticipated volume, freshness standards, and product availability.
- Coordinate closely with the Head Baker to ensure efficient use of ovens, proofing equipment, refrigeration, workspaces, and production schedules.
- Train and support other pastry and bakery team members when required in proper techniques, recipes, finishing, and presentation.
- Maintain accurate ingredient preparation, labeling, rotation, storage, and temperature controls.
- Monitor ingredient usage and production yields while minimizing waste without compromising quality.
- Maintain an exceptionally clean, organized, and professional pastry workspace.
- Follow all food safety, sanitation, allergen, and workplace safety procedures.
- Participate in tastings, recipe testing, product development, and continuous improvement of the OLIVĒTTE pastry collection.
What We're Looking For
We're looking for a pastry professional who combines technical skill, creativity, consistency, and genuine respect for the craft.
You don't simply follow a recipe—you understand why it works.
You recognize proper lamination by touch. You understand how temperature affects butter, dough, chocolate, creams, and fermentation. You notice when something is slightly off before it reaches the display.
Most importantly, you take pride in making something exceptional every day.
Education & Experience
You have either:
- A Culinary, Baking & Pastry Arts, or Pastry diploma/degree plus at least 2 years of professional pastry or bakery experience,
OR
- At least 4 years of professional pastry experience in a bakery, pâtisserie, hotel, restaurant, or similar high-quality production environment.
Preferred Experience
We'd especially like to hear from candidates with experience in one or more of the following:
- Croissants and laminated doughs
- European viennoiserie
- French pastry techniques
- Cakes, entremets, and celebration cakes
- Tarts and tartlets
- Choux pastry
- Mousses, creams, custards, and ganaches
- Chocolate work
- Petit fours and cookies
Canadian Red Seal Baker certification, Pastry certification, or an international equivalent is an asset but not required.

Physical Requirements
- Ability to lift, push, and pull up to 50 lbs.
- Ability to stand and work on your feet for extended periods.
- Comfortable working in warm and refrigerated production environments.
- Ability to perform repetitive pastry production tasks with precision.
- Available to work early mornings, weekends, and holidays as required.
